4 medium potatoes (about 7 ounces each), cut into 1/4-inch slices
3 tablespoons olive oil
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon coarsely ground pepper
TOPPING:
3/4 cup shredded part-skim mozzarella cheese
3/4 cup sour cream
2 green onions, sliced
1/2 teaspoon kosher salt
1/8 teaspoon pepper
6 bacon strips, cooked and crumbled

  • Preheat oven to 425°. Toss together first 6 ingredients. Place potato rounds on greased 15x10x1-in. pans. Roast until tender, 12-15 minutes. , Mix the first 5 topping ingredients; spoon onto potato slices. Top with crumbled bacon. Transfer to serving platters. Serve immediately.

4 baking potatoes, cut into 1/2 inch slices
1/4 cup olive oil (or butter)
2 TBL crushed garlic
4oz shredded cheddar cheese
4oz shredded mozzarella cheese
1/2 cup chopped green onions(about half a bunch)
Salt and pepper

Steps:

  • 1. Preheat oven to 400 degrees. 2. Arrange potato slices on a baking sheet and brush with olive oil. 3. Sprinkle with desired amount of salt and pepper and the 2 TBL of crushed garlic. 4. Bake in oven for 15 minutes, pull out and flip slices, then bake for 15 more minutes. 5. Pull out of oven and sprinkle the green onions and cheese over the potatoes. 6. Continue to bake until cheese has melted (about 5-10 minutes) 7. Serve with your favorite toppings!

5 Yukon Gold small to medium size potatoes, cut into slices
2 tablespoons melted butter
1/2 teaspoon salt and a few grinds of freshly ground pepper

  • Preheat the oven to 400 F. Line a baking sheet with parchment paper and grease the paper with the olive oil. Rinse the potatoes in cold water, pat dry and cut into slices about 1/4 inch wide.
