Time 1h35m

Yield 4

Number Of Ingredients 10

4 green bell peppers, tops and seeds removed (reserve tops)
1 pound ground beef
½ cup chopped onion
1 (14.5 ounce) can diced tomatoes with juice
½ cup long grain white rice
½ cup water
1 teaspoon Worcestershire sauce
1 pinch salt
1 pinch ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Chop enough reserved green pepper tops to equal 1/4 cup; discard remaining tops or use for another purpose. Set chopped pepper aside.
  • Place hollowed-out green peppers in a microwave-safe dish; cover and cook in microwave until bright green and steaming, about 3 minutes. Set peppers aside.
  • Cook and stir ground beef in a skillet with reserved chopped pepper tops and onion over medium heat until beef is browned, the juices run clear, and the onion is translucent, about 10 minutes; drain excess grease. Pour in diced tomatoes with their juice, rice, water, Worcestershire sauce, salt, and black pepper; bring to a boil. Reduce heat to low, cover skillet, and simmer until rice is tender, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir cheese into ground beef-rice mixture and spoon mixture into precooked peppers. Set peppers upright in an 8x8-inch baking dish.
  • Bake in the preheated oven until cheese is melted and the peppers are tender, about 30 minutes.

STUFFED/BAKED BELL PEPPERS WITH CHICKPEA MASH, EGGS AND HARISSA RECIPE

Stuffed/Baked Bell Peppers with Chickpea Mash, Eggs and Harissa Recipe image

Provided by dtrumble

Number Of Ingredients 14

6 item(s) uncooked bell pepper(s), assorted colors
2 spray(s) cooking spray
1 medium uncooked onion(s), diced
3 ⁄4 tsp table salt, or to taste (divided)
1 ⁄2 tsp black pepper, or to taste (divided)
1 ⁄2 tsp ground turmeric
1 ⁄2 tsp garlic powder
1 ⁄4 tsp ground cumin
1 ⁄4 tsp ground cinnamon
3 cup(s) fresh baby spinach, chopped
3 ⁄4 cup(s) canned drained chickpeas, rinsed, drained, mashed slightly with a fork
6 large egg(s)
6 tsp chives, or cilantro, minced
6 Tbsp harissa paste, mild or hot

Steps:

  • 1. Preheat oven to 425°F. Line a baking sheet with aluminum foil (or coat pan with cooking spray). 2. Slice a lengthwise piece off each pepper so stem and bottom remain intact; reserve cut pieces of pepper. Carefully scoop out membrane and seeds from peppers (use a melon baller if you have one) and set on prepared pan, cut-side up. Loosely cover peppers with aluminum foil; bake 15 minutes. 3. Meanwhile, dice reserved pepper pieces. Coat a large nonstick skillet with cooking spray; warm over medium-low heat. Add diced pepper, onion, 1/2 tsp salt and 1/4 tsp black pepper to skillet; saute until tender, 5-10 minutes. Add turmeric, garlic powder, cumin and cinnamon; toss to combine and heat for 30 seconds. Add spinach and chickpeas; toss to combine and remove from heat. 4. Remove peppers from oven. Reduce heat to 375°F. Divide chickpea mixture evenly among peppers; crack an egg onto each pepper, and sprinkle with salt and black pepper. Bake, uncovered, until egg whites set completely, about 20 minutes. Serve sprinkled with chives (or cilantro); spoon harissa over top. 5. Serving size: 1 stuffed pepper

Tips:

  • Choose the right peppers: Look for bell peppers that are firm, brightly colored, and have smooth skin. Avoid peppers that are soft, have blemishes, or are starting to wilt.
  • Prepare the peppers properly: Cut the peppers in half lengthwise and remove the seeds and ribs. Rinse the peppers well and pat them dry.
  • Use a variety of fillings: There are endless possibilities for fillings, so get creative! Some popular options include ground beef, turkey, chicken, rice, beans, vegetables, and cheese.
  • Season the filling well: Don't be afraid to use plenty of herbs and spices to flavor the filling. This will help to create a delicious and flavorful dish.
  • Cook the filling until it is cooked through: This is important to ensure that the filling is safe to eat. Depending on the filling you are using, this may take anywhere from 10 to 30 minutes.
  • Stuff the peppers tightly: This will help to prevent the filling from falling out during baking.
  • Bake the peppers until they are tender: This usually takes around 30 minutes, but may vary depending on the size of the peppers and the filling you are using.
  • Serve the peppers immediately: Stuffed peppers are best served hot out of the oven. They can be garnished with fresh herbs, grated cheese, or a dollop of sour cream.

Conclusion:

Baked stuffed peppers are a versatile and delicious dish that can be enjoyed for lunch or dinner. They are easy to make and can be tailored to your own taste preferences. With so many different variations to choose from, you're sure to find a recipe that you'll love. So next time you're looking for a hearty and satisfying meal, give stuffed peppers a try!
