Categories     Breakfast

Time 1h

Yield 4 serving(s)

Number Of Ingredients 7

1/4 cup chopped walnuts
4 good-quality red apples, such as Fuji, Braeburn, McIntosh, Rome Beauty
1/4 cup firmly packed brown sugar
2 tablespoons unsalted butter, at room temperature
1/2 teaspoon ground cinnamon
1/4 cup honey
1/2 cup apple juice

Steps:

  • Preheat an oven to 350ºF.
  • Spread the walnuts on a baking sheet and toast in the oven until lightly browned and fragrant, about 7 minutes. Remove from the oven and let cool.
  • Working from the stem end, use a melon baller to remove the core from each apple, scooping out the stem and seeds and making a deep hole for the filling; work to within about 1/2 inch of the bottom of the apple. Peel the skin from the top half of each apple.
  • In a small bowl, blend together the brown sugar, butter and cinnamon. Mix in the walnuts. Spoon equal amounts of the filling into the centers of the apples. Set the filled apples in an 8-inch square baking pan or other baking pan just large enough to hold them snugly.
  • In a small saucepan over medium heat, warm the honey with the apple juice, stirring until the honey dissolves. Pour around the apples. Spoon some of the liquid over the sides of the apples to moisten them, but do not spoon over the tops.
  • Bake, basting the sides once or twice with the pan juices, until the apples are tender when pierced, about 40 minutes. Remove from the oven, let cool and serve in bowls with the pan juices spooned over the tops.

Provided by Tara Parker-Pope

Time 1h30m

Yield 4 large servings, 8 half servings as an appetizer

Number Of Ingredients 16

1/2 cup cashews
1 pound firm tofu
2 teaspoons lemon juice
2 teaspoons olive oil
1 clove garlic, minced
1/4 teaspoon salt
1/4 cup nutritional yeast
1 teaspoon tahini
1 teaspoon white miso
4 small butternut squash
1/2 cup chopped walnuts
1/2 cup dried cranberries
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup breadcrumbs
1/4 cup parsley leaves, chopped

Steps:

  • Place cashews in a bowl and cover with cool water. Cover and soak in the fridge overnight. Drain the cashews and combine with remaining ingredients in a blender. Purée until completely smooth, occasionally scraping down the sides of the blender to create a consistently smooth cheese.
  • Preheat oven to 400 degrees Fahrenheit. Cut the butternut squash in half lengthwise, remove seeds and stringy bits from around the seeds and discard. Place the squash halves in a large roasting pan or rimmed baking sheet. Pour a quarter-inch of water into the pan and cover with aluminum foil. Bake for 40 minutes, until the squash are easily pierced with a fork.
  • Carefully remove squash from oven and allow to cool slightly. Once cool enough to handle, scoop out the flesh, leaving the skin intact. Place the scooped squash in a mixing bowl and mash. Mix in half of the chopped walnuts and half the dried cranberries, cinnamon, nutmeg and cashew cheese. Divide the mixture among the butternut squash halves.
  • In a small bowl, mix breadcrumbs, parsley and the rest of the walnuts and cranberries. Sprinkle the breadcrumb mixture on top of the butternut squash halves and bake for another 20 to 25 minutes, until the breadcrumbs are golden brown. Serve warm.

BAKED BEANS WITH POMEGRANATE MOLASSES, WALNUTS AND CHARD

Baked Beans With Pomegranate Molasses, Walnuts and Chard image

This Iranian-inspired rendition of baked beans is sweetened with pomegranate molasses, which you can find in Middle Eastern markets.

Provided by Martha Rose Shulman

Categories     dinner, project, main course

Time 3h

Yield 8 servings

Number Of Ingredients 10

1 pound white beans, soaked for 4 hours or overnight in 2 quarts of water, and drained
1 bay leaf
6 cups water (more as needed)
4 tablespoons extra virgin olive oil
2 large onions, preferably sweet red onions, finely chopped
1/3 cup pomegranate molasses
1 28-ounce can chopped tomatoes, with juice
Salt and freshly ground black pepper to taste
1 bunch Swiss chard, stemmed, leaves washed and chopped
1/2 cup (2 ounces) finely chopped walnuts

Steps:

  • Combine the drained beans, bay leaf and water (enough to cover by an inch) in a large, ovenproof casserole or Dutch oven (earthenware is nice) and bring to a gentle boil. Reduce the heat, cover and simmer 45 minutes to an hour, until just tender. Check from time to time to make sure the beans are submerged and add water if necessary. Remove the bay leaf.
  • Meanwhile, preheat the oven to 325 degrees. Heat 3 tablespoons of the olive oil in a medium-size heavy skillet over medium heat and add the onions. Cook, stirring often, until tender and lightly caramelized, about 10 minutes. Turn down the heat to low, add a generous pinch of salt, cover and continue to simmer, stirring often, until the onions are dark brown and have melted down to half their original volume, another 15 to 20 minutes. Stir into the beans, along with the pomegranate molasses, tomatoes, and salt and pepper to taste. Place in the oven and bake, covered, for 1 hour. The beans should be very tender. Check from time to time to make sure the beans are submerged; add water as necessary or just press down on the beans to cover them with liquid. (They shouldn't be swimming, though.)
  • Uncover the beans, taste and adjust salt, and stir in the Swiss chard. Sprinkle the walnuts over the top and drizzle on the final tablespoon of oil. Return to the oven and bake, uncovered, for 15 minutes more. Remove from the oven, taste and adjust seasonings. Serve hot or warm.

Baked Brie with Cranberry Sauce and Walnuts Recipe - (4.6/5) image

Provided by MissAlyssaG

Number Of Ingredients 5

3/4 cup cranberry sauce
1 (16-ounce) brie round
Zest of 1 orange
2/3 cup walnut pieces
Crackers for serving

Steps:

  • Preheat oven to 350°F. Remove the top of the rind from the cheese using a serrated knife, and discard the rind. Place the cheese, cut side up on an oven safe plate or bowl. Just make sure to use a larger plate or a bowl so your cheese doesn't start oozing off the plate like mine is in the above photo. Bake at 350°F for 10 minutes. Remove from the oven and top with the cranberry sauce. Bake for an additional 5 minutes, or until the cheese is soft and warm. Sprinkle the top with orange zest and walnuts. Serve immediately with crackers. NOTES: For a simple cranberry sauce combine 4 ounces cranberries , 1/3 cup orange juice, and 1/4 cup sugar. Bring to a boil, then reduce to medium and simmer till thickened and cranberries have popped. For extra flavor add 1/8 teaspoon nutmeg and cinnamon.

Tips for Baking Perfect Walnuts:

  • Choose fresh walnuts: Look for walnuts that are plump and free of blemishes.
  • Preheat your oven: This will help the walnuts to roast evenly.
  • Use a single layer: Spread the walnuts out in a single layer on a baking sheet. This will prevent them from steaming and ensure that they roast evenly.
  • Roast at a high temperature: This will help the walnuts to develop a nice golden brown color and a nutty flavor.
  • Stir the walnuts occasionally: This will help to ensure that they roast evenly.
  • Let the walnuts cool completely: This will help them to crisp up and will make them easier to store.

Conclusion:

Baking walnuts is a simple and easy way to enhance their flavor and texture. Roasted walnuts can be enjoyed as a snack, added to salads, or used in baking recipes. They are a versatile and nutritious addition to any diet. With these tips, you can easily create perfectly roasted walnuts that will be a hit with your family and friends.
