1 large yam
3/4 cup unsalted butter, divided (1 1/2 sticks)
1 cup orange juice
1/4 cup Grand Marnier
1/2 teaspoon nutmeg
1 orange, zest of
4 orange slices, for garnish
fresh parsley, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • Coat a baking dish with nonstick cooking spray.
  • Peel yam with a potato peeler. Slice yam into 1/4-inch slices.

3 egg yolks

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup sour cream
orange rind, grated
1/2 cup walnuts, chopped
3 cups egg whites, beaten
1/2 cup sugar
1/4 cup orange juice
1/3 cup Grand Marnier

Steps:

  • Cream sugar and butter.
  • Add egg yolks and 1 teaspoon Grand Marnier.
  • Continue to beat. Sift flour, baking soda and baking powder.
  • Add flour to mixture with sour cream, beginning and ending with dry ingredients.

8 medium yams, peeled and cubed
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
6 tablespoons unsalted butter, cut into small chunks
1 cup orange juice, or as needed
1 cup miniature marshmallows, or to taste

Steps:

  • Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
  • While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
  • Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.

8 pears, preferably bosc
1/2 cup granulated brown sugar
2 tablespoons butter, melted
1 vanilla bean
1/3 cup water
1/3 cup Grand Marnier or 1/3 cup orange liqueur
