BALSAMIC CUCUMBER SALAD

Balsamic Cucumber Salad image

This is a quick, lite cucumber salad. The balsamic vinegar adds a zing! I made this recipe because I was looking for quick healthy snack and because mom keeps telling me to eat my veggies! :) Many cucumber salads call for very thin slices which adds to prep time. Here you just dice them quickly!

Categories     Vegetable

Time 4m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 medium cucumbers
4 tablespoons fat-free mayonnaise
1 tablespoon balsamic vinegar (or to taste)
2 tablespoons sugar (or sugar substitute)
1 teaspoon lemon juice
1 clove garlic, minced
black pepper

Steps:

  • Combine all ingredients in a bowl (leaving out cucumber).
  • Slice cucumber lenth wise into quarters, then into 1/2 inch slices.
  • (Cucumber can be cut any way, but I like bite size crunchy pieces.) Mix cucumber into dressing mixture.
  • You can marinate if you wish, but tastes great right away!

Tips:

  • Choose the right cucumbers: For the best flavor and texture, use fresh, firm cucumbers that are not too seedy. English or Persian cucumbers are good choices.
  • Slice the cucumbers thinly: This will help them absorb the dressing better and make them easier to eat.
  • Use a good quality balsamic vinegar: A good balsamic vinegar will have a rich, complex flavor that will add depth to the salad. Look for a vinegar that is aged for at least 12 years.
  • Don't overdress the salad: A little bit of dressing goes a long way. You can always add more dressing if needed, but it's hard to take it away.
  • Let the salad marinate: This will allow the flavors to meld together and develop. The longer you marinate the salad, the better it will taste.
  • Serve the salad chilled: This will help to keep the cucumbers crisp and refreshing.

Conclusion:

Balsamic cucumber salad is a refreshing, flavorful, and easy-to-make side dish that is perfect for any occasion. With its simple ingredients and delicious taste, this salad is sure to be a hit with everyone who tries it. Experiment with different types of cucumbers, balsamic vinegars, and herbs to find your favorite combination.
