½ cup chicken broth
2 tablespoons white sugar
1 clove garlic, minced
1 teaspoon dried Italian herb seasoning

  • Whisk together the balsamic vinegar, chicken broth, sugar, garlic, and Italian seasoning in a bowl, place the chicken breasts in the marinade, and marinate for 10 minutes on each side.

Chicken can be cooked on the stove or on a grill. It is great for large family gatherings and does not really need to be served with anything other than a good loaf of bread for sopping up the juices. 3 cloves garlic, minced
2 ounces fresh basil leaves
½ cup olive oil
½ cup balsamic vinegar
6 skinless, boneless chicken breast halves
1 tablespoon salt
1 ½ teaspoons ground black pepper
1 pound penne pasta
2 pints grape tomatoes, halved
¼ cup olive oil
¼ cup balsamic vinegar
salt and pepper to taste

Steps:

  • Mince garlic cloves in food processor or blender. Add 1/3 of the basil leaves to the processor, and chop until fine. Pour in 1/2 cup of olive oil, and continue to process until mixture turns light yellow with flecks of basil. Add the balsamic vinegar; process just until combined.
  • Place the chicken breasts in a large zip-top storage bag along with 1 tablespoon salt, 1 1/2 teaspoons pepper, and the contents of the food processor. Squeeze air out of bag and seal. Allow chicken to marinate for 2 hours, or up to overnight, turning occasionally.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Brown chicken in a large skillet over large heat, about 4 to 5 minutes per side. Transfer chicken to a large baking dish, and place in the oven until cooked through, about 15 to 20 minutes. Remove chicken from oven, slice into 1/4 inch strips, and return to baking dish to absorb cooking juices. Keep warm.
  • While chicken is baking, bring a large pot of water to a boil over high heat. Boil the pasta until cooked through, but still firm to the bite, about 11 minutes. Drain well. Stir the chicken and the juices from the baking dish into the hot pasta.
  • Thinly slice the remaining basil leaves, and place in a large serving bowl along with the tomatoes. Stir in 1/4 cup olive oil, 1/4 cup balsamic vinegar, and salt and pepper to taste. Top basil and tomatoes with the hot pasta, sauce, and chicken; toss to combine.

1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
2 garlic cloves, chopped
2 tablespoons olive oil
Salt and freshly ground black pepper
1 (4-pound) whole chicken, cut into pieces (giblets, neck and backbone reserved for another use)
1/2 cup low-salt chicken broth
1 teaspoon lemon zest
1 tablespoon chopped fresh parsley leaves

Steps:

  • Whisk the vinegar, mustard, lemon juice, garlic, olive oil, salt, and pepper in small bowl to blend. Combine the vinaigrette and chicken pieces in a large resealable plastic bag; seal the bag and toss to coat. Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.

My Boyfriends favorite, and really easy to make. Left overs are just as good. I make this for a crowd with steamed carrots and a side salad for a complete healthy meal. NOTE: for those with Gluten Allergies or Celiac, this can work with GF noodles and draining them before adding them to the pot with the chicken, however I recommend half cooking the noodles before trying to add them to the chicken... otherwise the chicken gets tough by the time the noodles are cooked.

1 lb chicken breasts or 1 lb chicken tenders
4 cups balsamic vinegar
2 cups red wine
1 pint cherry tomatoes
4 garlic cloves
1 tablespoon olive oil
1/2 lb angel hair pasta
baby fresh mozzarella cheese (optional)

Steps:

  • Marinade Chicken in Wine, Olive oil and Balsamic Vinegar 20-30min.
  • Peel and Crush Garlic and toss in pan with the Chicken and Marinade.
  • Bring to a boil, simmer for ten minutes.
  • Cover and set aside for another 20 min while you prepare any sides or salads (this step can be skipped if you are in a hurry).
  • Break Angel Hair in half or thirds.

4 skinless, boneless chicken breasts, about 1 1/2 pounds
3/4 pound small to medium-size mushrooms
2 tablespoons flour
Salt to taste if desired
Freshly ground pepper to taste
3 tablespoons olive oil
6 cloves garlic, peeled
4 tablespoons balsamic vinegar
3/4 cup fresh or canned chicken broth
1 bay leaf
1/4 teaspoon dried thyme
1 tablespoon butter

Steps:

  • Split each chicken breast lengthwise in half. Cut away and discard any thin membranes that may remain on the flesh.
  • Rinse the mushrooms; drain and pat dry.
  • Season the flour with salt and pepper and dredge the chicken breast halves in the mixture. Shake off excess flour.
  • Heat the oil in a heavy skillet and cook the chicken breasts until nicely browned on one side, about 3 minutes over moderately high heat. Add the garlic cloves.
  • Turn the chicken pieces and scatter the mushrooms over all. Continue cooking, shaking the skillet and redistributing the mushrooms so that they cook evenly. Cook about 3 minutes and add the balsamic vinegar and broth. Add the bay leaf and thyme.
  • Cover closely and cook over moderately low heat 10 minutes. Turn the pieces occasionally as they cook.
  • Transfer the pieces to a warm serving platter and cover with foil.
  • Let the sauce with the mushrooms cook, uncovered, over moderately high heat about 7 minutes. Swirl in the butter.
  • Remove and discard the bay leaf. Pour the mushrooms in sauce over the chicken and serve.

4 (6 ounce) chicken breasts
3 garlic cloves, minced
1/2 onion, diced
2 cups fresh tomatoes, diced
1/4 cup balsamic vinegar
1/4 cup white wine
4 cups spinach, washed and dried
1 teaspoon basil, dried
extra virgin olive oil, for pan
salt and pepper, to taste

Steps:

  • Heat a large skillet and coat the bottom with just enough olive oil (about 2 Tbsp).
  • Saute garlic, dried basil, and onion until fragrant.
  • Flatten chicken breasts to 1/2 inch thick. Sprinkle with salt and pepper, sesar each breast side for about 6 minutes or until done.
  • When you have about 5 minutes left, add the tomatoes, vinegar and wine.
  • Allow to cook down for last 5 minutes.
  • Place a cup of spinach onto a plate, followed by the tomato reduction and then top off with the chicken.
  • Alternatively, toss spinach in the pan and stir for a minute or two, and serve skillet contents on top of egg noodles (our favorite way to eat it!).

Tips:

  • If you don't have any balsamic vinegar on hand, you can substitute another type of vinegar, such as apple cider vinegar or white wine vinegar. However, the flavor of the dish will not be as rich.
