3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

1/4 cup neutral oil, such as canola or vegetable oil
1/2 teaspoon ground cinnamon
1/2 cup chocolate chips, raisins or chopped walnuts
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
  • Place the bananas in the bowl of a stand mixer fitted with the paddle attachment. Beat until the bananas are mashed. Stop the machine and add in the oats, chopped dates, oil, cinnamon, chocolate chips and salt. Saw this recipe by Cary Neff of the Miraval Spa on the Oprah show. It is supposed to be a more healthy alternative to the 'purist' chocolate chip cookie. I made these but was skeptical that the purists around me would eat them. They did. Had to hide them to save them for a dinner gathering. These are moist and chewy and the banana taste didn't seem to be overpowering. I used all-purpose flour as I couldn't see going out to buy another type of flour (already have 3 different kinds at home) just to make these. We will have these again. I didn't get 8 dozen cookies but mine may have been larger than the recipe intends.

1/4 cup butter or 1/4 cup margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 cup mashed ripe banana (about 2 bananas)
1 large egg white
1 teaspoon vanilla
2 cups oats
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup milk chocolate chips

Steps:

  • Mix butter or margarine, sugar and brown sugar in a bowl until well combined.
  • Add the bananas, egg white, and the vanilla and beat until it is blended.
  • There will still be some banana lumps, that is OK.
  • Mix oats, flour, baking soda and salt in another bowl.
  • Add the banana mixture to this bowl and stir by hand until almost combined.
  • Then add chocolate chips and mix until just blended.
  • Drop by spoonful onto cookie sheet sprayed with non-stick cooking spray.
  • Bake about 12-14 minutes at 350 until cookies are just set and edges are golden brown.
  • Cool on a wire rack.

2 stick butter, room temperature
1 c dark brown sugar, packed
1/2 c granulated white sugar
1 large egg
3/4 c mashed banana (approx. 2 large bananas)
1 tsp banana extract
1 tsp real vanilla extract
2 2/3 c all-purpose flour
1/2 tsp baking soda
3/4 tsp salt
1/4 tsp baking powder
1 bag(s) semi-sweet or dark chocolate chips, 12 oz.
1 c chopped pecans, toasted

Steps:

  • 1. Chop your pecans (if necessary). Pre-heat the oven to 350 and toast pecans for 5-7 minutes.
  • 2. Turn oven down to 300. Line 2 cookie sheets with parchment paper.
  • 3. Measure flour, soda, salt, and baking powder in a large bowl. Use a whisk to mix well.
  • 4. Stir in the nut pieces and the chocolate chips.
  • 5. Place softened butter in a bowl and beat with an electric mixer until fluffy. Add the sugars, extracts, mashed banana, and egg. Beat well.
