BANANA CREAM PUDDING

Categories     dessert

Time 25m

Yield 8 servings

Number Of Ingredients 13

1 quart milk
2 cups sugar, plus 1/4 cup sugar
8 large eggs, separated, whites discarded or store for another use
1 teaspoon banana extract
1/3 cup bourbon
1/2 cup cornstarch
Salt
1/2 teaspoon pure vanilla extract, plus a splash
2 tablespoons butter, cut into cubes
1 cup heavy cream
4 large bananas, sliced
1 box vanilla wafers
1/3 cup creme de banana

Steps:

  • Scald milk, in a large sauce pot, with a pinch of the sugar (this avoids scorching the bottom of the pot).
  • In a mixing bowl, add egg yolks, banana extract, bourbon and 2 cups of sugar and whisk together until the mixture is pale yellow in color and thickened. Add cornstarch and mix to combine. Very slowly pour in a little of the milk mixture, you have to do it slowly to temper the mixture, (otherwise the eggs will scramble). Once fully incorporated pour the entire mixture back into the pot and place over medium heat. Stir constantly until it comes to a simmer and the mixture thickens enough that it coats the back of a wooden spoon. Remove from heat and add a pinch of salt and vanilla extract, then add butter cubes and stir to make the mixture rich and super glossy.
  • Transfer to a bowl and cover with plastic wrap, pressing the wrap onto the surface so it doesn't form a skin on the surface. Allow to cool.
  • In a large bowl, using a hand mixer, whip the cream with 1/4 cup of sugar and a splash of vanilla extract until you have stiff peaks. Set aside.
  • Slice bananas and add to pastry cream.
  • Line a small deep rectangular dish or a 10-inch pie dish with vanilla wafers. Splash with creme de banana then cover with banana pastry cream. Top with whipped cream and refrigerate until ready to serve.

EASY YUMMY BANANA CREAM PUDDING

Easy Yummy Banana Cream Pudding image

Made with cooked pudding this is a little more labor intensive but still very easy and very yummy. Make the pudding one evening and put the pudding together the next day so it has some time in the refrigerator to soften the cookies and mellow the flavors. I brought a recipe of this to a BBQ a couple of weeks ago. There were only ten people there but I honestly think I could have made three recipes of this and not had anything leftover. UPDATE: I made this for my MIL's Memorial and it was a hit. It gave a sweet touch to a sad day.

Categories     Dessert

Time 40m

Yield 1 pudding, 8-10 serving(s)

Number Of Ingredients 6

1 (14 ounce) can sweetened condensed milk
1 1/2 cups cold water
4 ounces vanilla pudding mix (not instant)
12 ounces Cool Whip
3 bananas, sliced
14 ounces vanilla wafers (Zaar insisted on a size and I guessed since I don't have a box of Nilla's around)

Steps:

  • Cook the condensed milk, water and pudding mix whisking all the time until it boils hard, remove from heat, lay plastic wrap on top to prevent skin and chill.
  • Fold the cool whip into the pudding.
  • In glass bowl layer the bottom with cookies top side facing out.
  • Layer bananas on top of the cookies.
  • Layer pudding mix on top of bananas.
  • Stick a layer of cookies up on edge, tops facing out, in a ring around your bowl so it looks pretty through the glass.
  • Repeat the layers ending with a layer of pudding and then topped with a layer of cookies. Be gentle and take your time with the layers to keep everything neat.
  • (You should use up all the cookies and banana slices except for the few you just had to eat.).

Tips for Making the Best Banana Cream Pudding:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful your pudding will be.
  • Don't overcook the pudding. Overcooked pudding will be thick and rubbery. Cook it just until it is thickened and coats the back of a spoon.
  • Chill the pudding before serving. This will allow the flavors to meld and the pudding to set.
  • Use high-quality ingredients. The better the ingredients you use, the better your pudding will be.
  • Get creative with your toppings. You can top your banana cream pudding with whipped cream, fresh fruit, nuts, or chocolate chips.

Conclusion:

Banana cream pudding is a classic dessert that is easy to make and loved by people of all ages. With a few simple ingredients and a little bit of time, you can create a delicious and creamy pudding that is perfect for any occasion. So next time you're looking for a sweet treat, give banana cream pudding a try. You won't be disappointed!
