Time 50m

Yield 6

Number Of Ingredients 6

½ cup small pearl tapioca
7 cups water, divided
5 medium ripe bananas, sliced
¼ teaspoon salt
½ cup white sugar
¾ cup coconut milk

Steps:

  • Place 2 cups of water in a microwave-safe dish and heat until warm in the microwave, about 2 minutes. Add the tapioca and let stand for 10 minutes. Drain in a sieve. You'll have a mushy puddle of tapioca left over.
  • Pour the remaining water into a saucepan and add the drained tapioca. Bring to a boil, then simmer over medium heat until the tapioca begins to turn transparent. Stir frequently to avoid sticking.
  • When the tapioca is transparent, stir in the bananas, sugar and salt. Simmer for 10 to 15 more minutes, stirring frequently. When the bananas are broken down fairly well, remove from the heat and stir in the coconut milk until well blended. The tapioca pearls will become visible and the pudding will be the consistency of thick soup. Taste and adjust the sugar if desired.
  • Cool to room temperature or slightly warmer. Stir again before serving.

Tips:

  • Use ripe bananas: Ripeness of bananas greatly affects the overall taste and texture of the pudding. Overripe bananas provide a richer flavor, sweetness, and a creamier texture.
  • Adjust sweetness: Adjust sugar or sweetener quantity depending on personal preference. Another option is to use naturally sweet bananas, which can help reduce the amount of added sweetener.
  • Dairy alternatives: This recipe is naturally dairy-free. You can also use your preferred type of milk, such as oat milk, soy milk, or almond milk.
  • Cooking methods: You can prepare the pudding on the stovetop or in the oven. The stovetop method requires constant stirring, whereas the oven method involves baking the pudding. Choose the method that best suits your time and preferences.
  • Garnish and flavorings: Personalize the pudding with various toppings, such as whipped cream, chopped nuts, fresh fruits, or a sprinkle of cinnamon or nutmeg, to enhance the flavors and presentation.

Conclusion:

Banana tapioca pudding is a delightful and versatile dessert that combines the classic flavors of banana and tapioca in a creamy, sweet treat. With just a few simple ingredients and easy-to-follow steps, anyone can create this delicious pudding. Enjoy it as a satisfying snack, a sweet treat after dinner, or as a comforting dessert to share with loved ones.
