1 large onion
1/3 cup olive oil
1/4 cup flavorful beer (craft pale ale, German dunkel, etc)

  • PREPARE THE PORK SKEWERS1. Trim excess fat from the pork shoulder and cut into 1 1/2 inch cubes. 2. Make a marinade by mixing the marinade ingredients. 1 (2 pound) pork shoulder
1 large clove garlic, finely grated
¼ cup grated onion
1 tablespoon light brown sugar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
½ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup prepared barbecue sauce

  • Slice the pork shoulder in half lengthwise. Cut each piece across into thin, 1/8-inch slices.

16 (6-inch) wooden skewers, soaked in cold water for 30 minutes

1/2 cup fresh lime juice
1/4 cup fish sauce

1 fresh Thai red chile, finely diced
2 teaspoons sugar
1 shallot, finely diced

Steps:

  • Whisk together the soy sauce, oyster sauce, cilantro, garlic, sugar, and black pepper in a bowl.
