THE BAREFOOT CONTESSA'S PARMESAN CROUTONS

The Barefoot Contessa's Parmesan Croutons image

This recipe comes from Ina's book, The Barefoot Contessa Cookbook. She says it was devised to use leftover baguettes and she uses them as crackers for appetizers, on top of soup and as a snack. She suggests that you grate whole parmesan rather than buying the already grated kind.

Time 25m

Yield 20-25 toasts, 4-6 serving(s)

Number Of Ingredients 5

1 baguette
1/4 cup olive oil
1 tablespoon kosher salt
2 teaspoons ground black pepper
1/4 cup grated parmesan cheese

Tips:

  • Choose thin asparagus spears: Thicker spears may take longer to cook and may not roast evenly.
  • Trim the asparagus: Cut off the woody ends of the asparagus spears.
  • Toss the asparagus with olive oil, salt, and pepper: This will help the asparagus roast evenly and develop flavor.
  • Roast the asparagus at a high temperature: This will help the asparagus spears to caramelize and develop a crispy texture.
  • Garnish with Parmesan cheese and lemon zest: This will add a pop of flavor and color to the roasted asparagus.

Conclusion:

Barefoot Contessa's Parmesan Roasted Asparagus is a delicious and easy-to-make side dish that is perfect for any occasion. The asparagus is roasted at a high temperature until it is tender-crisp and caramelized, and then tossed with Parmesan cheese and lemon zest.
