Steps:

3/4 cup cocoa powder
1 tsp baking soda
1 tsp salt
1 cup mini chocolate chips, (optional)
1 1/2 cup sugar, (or xylitol for sugar free)
1/2 cup applesauce, (banana, or yogurt of choice)
1/2 cup oil, (almond butter, or allergy-friendly sub)
1 1/2 tbsp pure vanilla extract
1 1/2 cup water

Steps:

  • Preheat the oven to 350 F. Grease two 8-inch pans. Set aside. Stir together the flour, cocoa powder, baking soda, salt, optional chips, and sweetener in a bowl. If using almond butter, gently warm it until soft and easily stir-able. In a new bowl, whisk the oil or nut butter, applesauce or yogurt, water, and vanilla. Pour wet into dry and stir until just combined (don't over-mix). Pour into the pans.Bake on the center rack for 25 minutes or until batter has risen and a toothpick inserted into the center of the cakes comes out mostly clean. (I like to take them out when still a little undercooked, let cool, then set in the fridge overnight. This prevents overcooking, and the cakes firm up nicely as they sit.) If you can wait, I highly recommend not tasting until the next day... this cake is so much richer and sweeter after sitting for a day! When ready to frost, go around the sides with a knife, then invert each cake onto a large plate. Frost separately, then place one cake on top of the other if a double-layer cake is desired. Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.

Mininum ingredients, easy to make and healthier than many oily cake mixes. I am posting this so that I can get the nutritional information. It makes a great vegan cake, brownie, muffins or pudding depending on what you add. For a denser fudge cake add up to one cup of dark chocolate chips. some other favourites of mine are 2/3 cup of chopped nuts, cherries, coconut etc. You can reduce the cocoa slightly for a less chocolately cake. Also you can use normal wheat flour. Without any oil it really does benefit from some chocolate chips. Another thing I like to do is make up the dry mix in batches and put it in jars in bags and then all I need to do is sift it into the wet mix or give the dry mix away as gifts in nice jars. It is also nicer the nice down and because of the moistness from the applesauce it keeps well, freezer and defrosts and heats up beautifully especially if making puddings.

I wanted to make some basic chocolate chip cookies for my kids (vegan & spelt) and found this recipe on http://www.vegfamily.com/vegan-recipes/desserts/spelt-carob-cookies.htm. It goes together really quickly and easily and only has 8 ingredients. I used a light spelt flour, which I think is most suitable for this recipe. They're a little cake-like, as with most vegan cookies...I prefer them this way. Note that the recipe only makes 12 cookies - you could make 24 small ones, but I like the larger size. Use carob or vegan chocolate chips, and I'm sure you could add some nuts and seeds if you choose. Hope you enjoy!
