CALAMARI

Tapas is easy but so impressive - this is a perfect recipe to wow your friends at dinner parties. Match with a glass of Campo Viejo Rose 2008 - it's a lovely pairing.

Provided by natalielobel

Time 15m

Yield Serves 4

Number Of Ingredients 11

Half kilo cleaned squid
Half litre milk
2 cloves garlic, crushed
Flour for dusting
Vegetable oil for frying
1 egg yolk
1 cup iced lemonade
Pinch baking powder
Half tsp salt
Quarter of a cup corn flour
Three quarters of a cup plain flour

Steps:

  • Cut the squid into rings or strips and separate the tentacles. Place in a bowl with the milk and garlic for a couple of hours.
  • Mix all the dry elements of the batter together in a bowl. When ready to cook, take a suitable pan and fill it 1/3 with oil. Heat but do not let the oil smoke. If you have a thermometer heat to 200 degrees C. If you do not have a thermometer place a small cube of white bread in the pan. If it browns in 5 to 10 seconds the oil is at the correct temperature.
  • When ready, mix the icy lemonade with the egg and then into the dry batter ingredients. It should resemble melted ice cream.
  • Dust each piece of the squid in flour, then into the batter, shaking off the excess. Carefully drop into the oil and cook for approx 2 minutes until golden. Cook as much as you can cope with at a time, but do not overfill the pan. When golden remove onto kitchen towel to drain.
  • Serve with lemon, salt and pepper.

FRIED SQUID

Fried Squid image

While cooking squid I tried innumerable coatings. I have two conclusions to report: If you like cakey batter, make what amounts to a thick pancake batter. If you just want a little bit of crust (this is my preference), dredge lightly in flour; it doesn't get any simpler or better.

Categories     quick, appetizer

Time 2m

Yield 4 servings

Number Of Ingredients 7

Neutral oil, like grapeseed or corn, as needed
1 1/2 pounds cleaned squid, sliced into rings, tentacles cut in half lengthwise if large
Salt
ground black pepper
All-purpose flour as needed
3 or 4 jalapeños, cut into rings, optional
Lemon wedges for serving

Steps:

  • Put 1 1/2 to 2 inches of oil in a deep pan over medium-high heat. Meanwhile, spread about 1/4 of the squid at a time on several layers of paper towels and put another couple of layers of towels on top, blotting squid to rid it of as much moisture as possible. Season squid with salt and pepper; put flour in a bowl.
  • When oil is hot, put about 1/4 of the squid in flour, then move it to a sieve over the bowl and shake to remove any excess. Add squid to oil along with some jalapeños if you like, adjusting heat as necessary so temperature remains nearly constant. Fry until squid is lightly browned and cooked through, about 2 minutes. Do not overcook. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt. Start next batch while you eat the first with lemon wedges.

Tips:

  • Use fresh squid: Fresh squid has a more delicate flavor and texture than frozen squid.
  • Clean the squid properly: Be sure to remove the ink sac, beak, and eyes from the squid before cooking.
  • Score the squid: Scoring the squid will help the batter adhere better and will also help the squid to cook more evenly.
  • Use a light batter: A light batter will allow the flavor of the squid to shine through.
  • Fry the squid in hot oil: Hot oil will help the squid to cook quickly and evenly.
  • Do not overcrowd the pan: Overcrowding the pan will cause the squid to steam rather than fry.
  • Serve the squid immediately: Battered squid is best served immediately after it is cooked.

Conclusion:

Battered squid is a delicious and easy-to-make appetizer or main course. By following these tips, you can make sure that your battered squid is cooked to perfection. Enjoy!
