SUNNY'S EASY BBQ BRAISED BRISKET WITH SWEET POTATO AND CARROT MASH

Sunny's Easy BBQ Braised Brisket with Sweet Potato and Carrot Mash image

Provided by Sunny Anderson

Categories     main-dish

Time 5h40m

Yield 4 to 6 servings

Number Of Ingredients 10

1 beef brisket (approximately 3 pounds)
1/4 cup BBQ rub
2 tablespoons vegetable oil, plus more for drizzling
2 cups pearl onions (frozen or fresh)
2 cups baby carrots
Two 1.5-pound bags steamable sweet potatoes, peeled and halved lengthwise
4 cloves garlic
2 cups BBQ sauce, store-bought or homemade
2 cups beef stock
1/4 cup finely chopped fresh parsley

Steps:

  • Coat the brisket on all sides with the rub and actually rub it in. Pull out a length of plastic wrap for the brisket and drizzle some oil where you plan to place the brisket. Place the brisket on top and drizzle the top with oil. Wrap tightly and rest at room temperature for 2 hours. If you are making this ahead of time, you can refrigerate, then rest on the counter for 2 hours before braising.
  • Add 2 tablespoons of oil to a large Dutch oven over medium-high heat. When the oil begins to swirl, add the brisket and sear on all sides until browned, 3 to 4 minutes per side. Remove to a plate.
  • Add the onions, carrots and potatoes to the pot and cook for a few minutes to coat them in the fat and get a bit of color. Make the contents of the pot as level as possible, toss in the garlic, then place the seared brisket on top of the vegetables.
  • Stir together the BBQ sauce and stock in a medium bowl. Add to the pot around the brisket, being careful to only fill halfway up the brisket, leaving a bit of the seared meat above the liquid line (you may not use all the liquid). Raise to a boil and lower to a low simmer. Cook, covered, for 2 to 3 hours without peeking, until the brisket is tender!
  • Remove the brisket from the pot to a plate and cover gently with aluminum foil. Remove the vegetables from the pot with a slotted spoon and place in a food processor. Blitz until smooth, adding liquid from the pot if needed for texture. Use the remaining liquid as a sauce for the brisket, if desired. Transfer the mash to a bowl and fold in the parsley. Serve with the sliced brisket and additional sauce.

SLOW COOKED BRISKET WITH BROWN SUGAR, CARROTS AND GREMOLATA

Slow Cooked Brisket with Brown Sugar, Carrots and Gremolata image

There are two distinct parts of brisket, the first and second cuts. The first cut is very lean, and the second loaded with beautiful (fat) marbling. This makes cooking a "whole" brisket a felony. It's like cooking a small and large potato in the same oven, for the same amount of time, and expecting them both to be perfectly cooked. Brisket falls under the category of "butcher's cuts" that were prized and taken home more by the butcher than the customers. That said, adjust your cooking time for slightly shorter with the leaner pieces and slightly longer with the more "marbled" ones. This is a simple recipe with a good thickening trick at the end-and don't be scared: gremolata is just a fancy word for garlic, parsley and lemon...

Time 4h20m

Yield 6 to 8 servings

Number Of Ingredients 17

One 3- to 4-pound second-cut or point-cut brisket, preferably in one piece
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
3 large shallots, sliced lengthwise
12 large cloves garlic
1 pound small carrots, halved lengthwise
1/4 cup dark brown sugar
1/4 cup red wine vinegar
5 cups beef stock
2 tablespoons mayonnaise
3 tablespoons grainy mustard
2 teaspoons coriander seeds, lightly crushed
1 teaspoon plus 2 tablespoons extra virgin olive oil
1 cup flat-leaf parsley leaves, stemmed
2 large cloves garlic, minced
Zest and juice from 1 large lemon
Kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the brisket: Tie the circumference of the brisket with butcher's twine. In a large Dutch oven or other wide heavy pot, heat the oil over medium-high heat. When the oil begins to smoke lightly, sprinkle both sides of the brisket with salt and pepper. Use metal tongs to add the meat to the pot. If the oil is hot enough, the meat won't stick. Cook, undisturbed, on its first side, until browned, 3 to 5 minutes. Turn on the other side and brown, 3 to 5 additional minutes. Remove the meat from the pot and place it on a baking sheet.
  • Cook the vegetables: Lower the heat to medium. In the same pot add the shallots, garlic and carrots and sprinkle them with another pinch of salt. Brown for 3 to 5 minutes. Stir in the sugar and vinegar and simmer over very low heat until the liquid reduces and starts to coat the carrots, 3 to 5 minutes. Pour the vegetables and cooking liquid into a bowl.
  • Cook the meat: Return the brisket to the pot and add the beef stock. Bring the stock to a gentle simmer. Cover, then place the pot in the center of the oven and cook for 1 hour. Remove the pot from the oven and add the vegetables and their liquid back in. Return the pot to the oven, uncovered, and cook until the meat is tender when pierced with a fork, an additional 1 to 2 hours. (If the meat looks dry or begins to get overly browned, cover the pot with the lid or a layer of aluminum foil for the remaining oven time.)
  • Make the gremolata: In a small skillet, toast the coriander seeds in 1 teaspoon olive oil until lightly colored and fragrant. Meanwhile, in a small bowl, combine the parsley, garlic, lemon zest and juice and a generous pinch of salt. Add the coriander seeds warm, straight from the skillet. Add the remaining 2 tablespoons olive oil, then stir and set aside.
  • Finish: Remove the pot from the oven and allow it to rest for 10 to 15 minutes. Meanwhile, blend half the cooking liquid and half of the remaining vegetables in a blender until smooth, then pour back into the pot. Whisk in the mayonnaise and mustard. Taste for seasoning. Slice the meat against the grain. (It should be fork-tender without being dry.) Transfer the meat and the remaining vegetables to a serving platter Pour the sauce over the meat. Serve with the gremolata.

Number Of Ingredients 13

3 tablespoons extra-virgin olive oil
5 pounds beef brisket
Coarse salt and freshly ground pepper
4 medium onions, halved and thinly sliced
4 garlic cloves, thinly sliced
1 can (28 ounces) whole peeled plum tomatoes, coarsely chopped, with juice
2 3/4 cups homemade or low-sodium store-bought beef stock
1/3 cup cider vinegar
1 bag (14 1/2 ounces) prepared sauerkraut, drained
1 cup pitted prunes
1 cup dried Black Mission figs
1 cup dried apricots
1 cup pitted dates

Steps:

  • Preheat oven to 400 degrees. Heat oil in a large roasting pan over high heat. Season beef with salt and pepper. Brown beef in pan all over, about 4 minutes per side. Transfer to a platter. Add onions and garlic to pan; reduce heat to medium. Cook, stirring, until onions just turn golden, about 5 minutes. Add tomatoes and juice, the stock, and vinegar; bring to a boil.
  • Return meat to pan; cover with foil. Cook in oven until fork-tender, about 1 1/2 hours. Turn meat; add sauerkraut and dried fruits. Cover; cook until meat is very tender and sauce is reduced, about 1 1/2 hours. Let stand 30 minutes. Slice meat against the grain. Serve with sauce.

Tips:

  • For fall-off-the-bone tender brisket, braise it low and slow for at least 3 hours.
  • Sear the brisket in a hot skillet before braising to develop a rich, flavorful crust.
  • Use a variety of dried fruits, such as apricots, cranberries, and raisins, to add sweetness and complexity to the braising liquid.
  • Roasted yams and carrots are a classic side dish for braised brisket.
  • Serve the brisket with mashed potatoes, roasted vegetables, or a simple green salad.

Conclusion:

Braised beef brisket is a delicious and hearty dish that is perfect for a special occasion or a casual family meal. The combination of tender beef, sweet and tangy dried fruits, and roasted vegetables is sure to please everyone at the table. This recipe is also relatively easy to make, so it's a great option for busy weeknights.
