This is one of my family's favorite meals. I got this recipe from my Grandmother. I love to serve this with a side of green beans. Great the next day and reheats or freezes well. Great on those rainy days.

3 tablespoons butter
3 tablespoons olive oil
2 pounds beef stew meat
¼ cup all-purpose flour
5 cups water
2 (6 ounce) packages long grain and wild rice mix
1 (8 ounce) package sliced mushrooms

Steps:

  • Melt butter with olive oil in a large heavy pot or Dutch oven over medium heat. Place flour in a shallow bowl and dredge the beef tips in the flour. Brown the beef in the hot butter and oil, stirring often, about 15 minutes.
  • Pour water into the pot and scrape to dissolve browned food bits from the bottom of the pot. Stir in the flavor packets from the rice mix and dissolve; mix in the rice and mushrooms. Bring the mixture to a simmer and reduce heat to medium-low; simmer until beef is tender and the rice has absorbed the liquid, 20 to 30 more minutes.

3 lbs sirloin tip steaks, cut into 1-inch cubes
1/3 cup all-purpose flour
5 tablespoons olive oil, divided
1 large yellow onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
4 cups water
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/3 cup water
3 tablespoons all-purpose flour
hot cooked rice
1/2 tablespoon dried parsley, for garnish

Steps:

  • In a large Dutch oven, heat 2 tablespoons olive oil over medium heat.
  • Add onion, bell pepper and garlic.
  • Cook for about 5 minutes or until veggies are tender.
  • Remove veggies from pan and place on a dinner plate.
  • In a bowl, toss together beef tips and 1/3 cup flour.
  • Add remaining 3 tablespoons of oil to the Dutch oven.
  • Place beef tips in Dutch oven and brown on all sides and cook for about 10 minutes, stirring regularly.
  • Add veggies back to the Dutch oven.
  • Add 4 cups water, soy sauce, Worcestershire sauce, seasoned salt and pepper, stirring well.
  • Bring to a boil.
  • Reduce heat and cover partially.
  • Let simmer for 1 hour.
  • In a small bowl, combine 1/3 cup cold water and 3 tablespoons flour, mix well.
  • Add flour mixture to the beef tips, cooking for 2-3 minutes or until mixture thickens.
  • Serve over hot cooked rice.
  • Garnish with parsley.

2 tablespoons butter
1/2 cup slivered or sliced almonds
2 cups white rice
1 orange, zested
1 lemon, zested
1 quart chicken stock
6 tablespoons extra-virgin olive oil, divided
2 pounds beef tenderloin or sirloin tips, bite size pieces
Salt
Freshly ground black pepper
1 1/2 pounds mushroom caps, cremini or white, brushed clean and halved
6 clove garlic, finely chopped
1/2 cup dry Spanish sherry
1 cup beef stock

Steps:

  • Heat a sauce pot over medium heat, add butter to the pot and melt. Add almonds and toast 3 to 4 minutes. Add rice and the zest of an orange and a lemon then turn the rice to coat, cook 1 minute. Add stock and bring to boil, reduce to simmer, cover and cook 17 to 18 minutes.
  • While rice cooks, heat a large skillet over medium-high heat with 3 tablespoons olive oil, 3 turns of the pan. Pat meat dry. When oil ripples and begins to smoke, add the beef and brown 3 minutes on each side. Remove when evenly deep brown and reserve on plate.
  • Add remaining olive oil to skillet, 3 turns, heat until oil ripples then add mushrooms and brown 7 to 8 minutes. Add garlic after 5 to 6 minutes. Season mushrooms with salt and pepper cook a few minutes more. Add sherry, reduce 1 minute, add beef stock and beef tips and their juices to pan. Reduce heat and cook 3 to 4 minutes more. Turn off heat.
  • Fluff rice with fork and serve with the beef and mushrooms.

2 lbs stew meat (trimmed)
24 ounces Italian dressing (1 large bottle)
1 -2 au jus gravy (if using packets-add water as instructed on packet)
3 cups rice (I use Uncle Bens long grain)
cornstarch (cornstarch & water to thicken)
oil (to brown beef)

Steps:

  • Marinade beef in italian dressing overnight if possible.
  • Brown beef in skillet with some oil if needed, save italian dressing to add later. (I skip browning the beef on occasion, and turns out just fine).
  • In a large pot, pressure cooker, crockpot or oven dish, add au jus gravy, 1/2-all of the remaining italian dressing, and beef. Cover and cook on med low, or at 325 (for oven).
  • Cook until tender (crockpot 8-10 hrs, Oven 2-3 hrs).
  • Start rice and cook according to directions. Can add some butter to rice.
  • Before serving: In a cup, add about a teaspoon of cornstarch and enough water to make into paste. Add to meat mixture and stir.

2 1/2 pounds beef stew meat
1 1/4 cups water
2 beef bouillon cubes
1 (10.5 ounce) cream of mushroom soup
1 onion (chopped)
2 (.87 ounce) packages brown gravy mix
3 cups cooked rice

Steps:

  • Spray slow cooker with non stick cooking spray. Turn onto Low setting.
  • Place stew meat in the bottom of the slow cooker.
  • In a microwave safe bowl add the water and 2 beef bouillon cubes. Bring to a boil in the microwave and then stir until cubes are dissolved.
  • Then add in the soup, chopped onion, and gravy mix packets.
  • Stir until combined and pour over the beef in the slow cooker.
  • Gently stir until all the meat is covered.
  • Cover with lid and cook on low setting for 6 hours.
  • If you like the gravy a little thicker at the end of the cooking time, add in 1 Tablespoon of cornstarch.
  • Serve over cooked rice.

2 lbs boneless top sirloin roast, cut into 1 inch cubes (I usually use stew meat that you can buy already cut up in the store)

2 large onions, chopped
1 beef bouillon cube (I like to use 2, for more flavor)
3/4 cup boiling water
4 1/2 cups hot cooked rice

Steps:

  • Combine first 4 ingredients in a zip-top plastic bag and shake to mix. (I like to double first 4 ingredients because it makes more gravy, yummy!) Add beef cubes and shake to coat.
  • Brown beef in hot oil in Dutch oven or large pot, stirring often. Add onion and cook until tender. Dissolve bouillon cubes in boiling water and add to beef mixture. Cover, reduce heat, and simmer 2 hours, stirring occasionally. If water evaporates too quickly add more water/bouillon cube mixture.

2 tablespoons salted butter
1 medium onion, chopped

  • Mix flour, steak seasoning, garlic powder, onion powder, kosher salt, and pepper together in a 1-gallon zip-top bag. Add sirloin strips and shake until evenly coated.

1 onion, chopped
2 pounds cubed beef stew meat
2 cups water
¼ cup soy sauce
¼ cup Worcestershire sauce
