3/4 cup cornmeal
1/2 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 lemon, zest of
1 cup blueberries
1 large egg, lightly beaten
1 cup milk
1/4 cup canola oil
1 teaspoon pure vanilla extract
2 tablespoons white sugar

Steps:

  • Preheat oven to 400 degrees F.
  • Butter muffin pan. Set aside.
  • In a large bowl combine the flour, cornmeal, sugar, baking powder, salt, and lemon zest. In a separate bowl combine 2 tablespoons of this mixture with the berries.
