CHILLED PLUM AND BERRY SOUP

Chilled Plum and Berry Soup image

With its toasted brioche and healthy dollop of mascarpone mixed with heavy cream, this soup is a close cousin to classic berry pudding. The brioche soaks up fruit juices in a satisfying way.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Number Of Ingredients 9

6 ripe plums, halved and pits removed
1/4 cup sugar
8 ounces blackberries
6 ounces red raspberries
3/4 cup Sauternes wine
1/4 teaspoon salt
6 mini brioche or one small loaf
1 cup mascarpone, cheese
1 ounce heavy cream

Steps:

  • Set a large skillet over medium heat. Add 5 plums, cut side down; sear until plums start to blister, 8 to 10 minutes. Stir plums on skin side with a wooden spoon. Sprinkle with sugar, and add one-third of the blackberries and one-third of the raspberries to the skillet.
  • Cook until fruit begins to release juice, about 10 minutes more. Add Sauternes wine, 2 cups cold water, and salt to skillet. Mix well. Bring mixture to a boil, reduce heat to medium low; let simmer until fruit begins to break down and liquid is very flavorful, 10 to 12 minutes. Remove from heat. Puree mixture through a food mill set over a bowl; discard solids. Pass puree through a fine mesh sieve set over a bowl. Discard solids.
  • Slice remaining plum into thin slivers, and add to soup. Add another third of the blackberries and another third of the raspberries to soup. Transfer to refrigerator until chilled.
  • Heat oven to 350 degrees. Slice mini brioche in half (if using loaf, slice into 1/2-inch-thick slices). Place brioche on a baking sheet; toast until golden, 10 to 12 minutes. Remove from oven, and set aside.
  • Combine mascarpone and heavy cream in a small mixing bowl. Fold together by hand. Spoon mixture over toasted brioche. Arrange remaining third of berries over mascarpone, and place two toasts into each bowl. Pour chilled soup in bowls, and serve.

WATERMELON AND BERRY SOUP

Watermelon and Berry Soup image

This is a wonderful, easy recipe. Dairy free, no cook, quick to make! Perfect for entertaining in the summer. I "adjusted" the original of this recipe which came from "Vegetarian Cooking for Everyone", a fabulous cookbook by Deborah Madison which won Julia Child and James Beard awards (I'm not vegetarian, it's just a great book!). I always keep Costco's 3 Berry Mix in my freezer. I use these frozen berries, but use fresh if you prefer. I like the texture the thawing berry's have in the soup as well as the unexpected chill they add to each bite. This is really an easy recipe to adapt, be creative, go wild! * Note: I bought a VitaMix and pureed the watermelon, but it completely liquified. You want a puree, not liquid, so "pulses" is important, maybe on lowest setting. You can almost make a puree just by mashing the pulp if you don't have a blender.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

6 cups watermelon, seeded and cut in chunks
1 -3 lime (lemons can be used)
1 pinch salt
2 cups frozen berries (I like Costco's blueberry, marionberry, raspberry mix. Use fresh berries if you prefer)
3 tablespoons light brown sugar (a little more or less is fine)
1 dash rose water (or orange flower water)
2 lbs watermelon (more or less)
4 mint sprigs, chopped (lemon verbena is nice as well)

Steps:

  • Puree the watermelon chunks (a blender works fine) and pour the puree into a bowl.
  • Starting with 1/2 a lime, add lime juice to taste.
  • Add a pinch of salt.
  • Cover and refrigerate until quite chilled and ready to serve.
  • Seed the remaining watermelon and cut into bite sized chunks. Refrigerate until serving.
  • For Frozen Berries:
  • About 45 minutes before serving, in a smallish bowl toss the berries with the brown sugar and a squeeze of lime and stir. Just leave on the counter to macerate (create juice/syrup). This should allow the berries to thaw, yet not quite completely. But hey, if they totally thaw, they thaw, it still tastes great.
  • For Fresh Berries:
  • In a smallish bowl toss the berries with the brown sugar and a squeeze of lime and stir. Cover and place in the refrigerator to macerate (create juice/syrup). This could be done the night before.
  • Before serving taste your berries and syrup and add the rosewater (or orange flower water) to taste and more lime if needed.
  • To Serve: Divide the watermelon puree among chilled soup bowls and add the watermelon pieces, then the berries on top with a drizzle of berry syrup. Top with a garnish of chopped mint or lemon verbena.

CUMIN-SCENTED WHEAT BERRY-LENTIL SOUP

Cumin-Scented Wheat Berry-Lentil Soup image

From Eating Well March/April 2007 -- Freshly squeezed lemon juice adds a bright note to this toothsome and hearty winter soup, perfect for a weeknight supper with a hunk of crusty bread. It freezes beautifully - you can keep individual portions in the freezer for healthy weekday lunches. NOTE: Wheat berries are whole kernels of wheat with just the outer husk removed. When cooked they have a chewy bite and nutty flavor. Preparation of the wheat berries in advance is necessary - get the wheat berries cooking for about 30 minutes, then start the soup. Timing is everything!

Time 1h10m

Yield 6 1 2/3-cups, 6 serving(s)

Number Of Ingredients 16

1 cup hard red winter-wheat berries
3 1/2 cups cold water
1/2 teaspoon salt
1 1/2 cups french green lentils (Puy) or 1 1/2 cups brown lentils, sorted and rinsed
4 cups vegetable broth
4 cups cold water
3 tablespoons extra virgin olive oil
3 large carrots, finely chopped
1 medium onion, diced
3/4 teaspoon sea salt
1/4 teaspoon fresh ground pepper, plus more to taste
4 garlic cloves, minced
1 1/2 teaspoons ground cumin
1 1/2 cups cooked wheat berries (instructions below-prepare in advance)
1 bunch red swiss chard or 1 bunch rainbow swiss chard, large stems discarded, leaves roughly chopped
3 tablespoons fresh lemon juice

  • Sort through wheat berries carefully, discarding any stones. Rinse well under cool running water. Place in a large heavy saucepan. Add water and salt.
  • Bring to a boil over high heat, then reduce heat, cover and simmer gently for 1 hour, stirring occasionally. Drain and rinse.
  • PREPARE THE SOUP (makes about 6, 1 2/3 cup servings) -
  • Combine lentils, broth and water in a dutch oven. Bring to a boil over high heat, reduce heat, cover and simmer gently until the lentils are tender, but not mushy, 25 to 30 minutes (brown lentils take a little longer to cook than green).
  • Meanwhile, heat oil in a large skillet over medium heat. Add carrots, onion, salt and pepper. Cook, stirring occasionally, until the vegetables begin to brown, about 15 minutes. Add garlic and cumin and cook, stirring constantly, for 30 seconds more. Remove from the heat.

Tips:

  • Choose the right berries: Use a variety of berries to create a soup with a complex flavor. Fresh or frozen berries can be used, but avoid berries that are bruised or moldy.
  • Sweeten to taste: The amount of sugar or other sweetener you add to your soup will depend on the tartness of the berries and your personal preference. Start with a small amount and add more to taste.
  • Thicken the soup: If you want a thicker soup, you can add a cornstarch slurry or a roux. A cornstarch slurry is made by mixing cornstarch with a small amount of water until smooth. A roux is made by cooking flour and butter together until golden brown.
  • Garnish with fresh herbs: Fresh herbs, such as mint, basil, or thyme, can add a pop of color and flavor to your soup. Add them just before serving.

Conclusion:

Berry soup is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up fresh or frozen berries, and it can be made in a variety of ways to suit your taste. Whether you like it sweet, tart, or somewhere in between, there is a berry soup recipe out there for you.
