1 cup water

12 oz semisweet baking chocolate, chopped
6 tablespoons butter (do not use margarine)
1/3 cup whipping cream
1 tablespoon seedless raspberry jam
1 cup fresh berries, such as raspberries, blackberries, strawberries and/or blueberries

Steps:

  • Make Cake, Filling and Ganache Heat oven to 350 °F (325° F for dark or nonstick pans). Spray 2 (8- or 9-inch) round pans with cooking spray. Make and bake cake mix as directed on box for round pans, using oil and eggs called for on box and the 1 cup water. Cool in pans 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour. Using serrated knife, cut rounded top off cakes to make a level surface.
  • In medium bowl, beat filling ingredients with electric mixer on low speed just until blended, adding enough milk for spreading consistency. Refrigerate until ready to use.
  • In 1-quart saucepan, heat ganache ingredients over low heat, stirring frequently, until chocolate is melted and mixture is smooth. Refrigerate about 45 minutes, stirring occasionally, until slightly thickened and spreadable.

225g dark chocolate , 70% cocoa solids
175g unsalted butter , chopped, diced
2 tsp vanilla extract
¼ tsp instant coffee powder or extract
100g toasted almonds
2 heaped tbsp plain flour
½ tsp salt
5 eggs
140g golden caster sugar
12 fresh or defrosted frozen raspberries , plus about 40 more for decoration
4 tbsp raspberry jam
140g dark chocolate , 70% cocoa solids, chopped
100ml double cream
icing sugar and sweet vanilla cream, to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line the bases of two 23cm cake tins with baking parchment. Melt the chocolate and butter in the microwave; leave to cool. Stir in the vanilla and coffee powder.
  • Whizz the almonds in a food processor until finely ground, then add flour and salt, and transfer to a bowl. Whisk the eggs with an electric mixer for 5 mins, until doubled in volume. Slowly add the sugar, whisk for 1 min more. Fold in the cooled chocolate mixture until just combined. Sprinkle over half the flour mixture and fold in, then the other half. The mixture will be rather runny.
  • Divide between the two tins and bake for about 15 mins until a skewer comes out with a few crumbs attached - the sponges should be slightly undercooked. Cool in tin, then turn out onto a wire rack.
  • Choose the less perfect of the two, then set it on a serving plate. Mash 12 raspberries and stir in the jam. Spread on the base, then top with the other cake.
  • For the glaze, bring the cream to the boil, pour it over the chocolate and whisk until smooth. Leave for a few mins until starting to thicken, then spread over the top and sides to cover. Decorate with raspberries. Chill for up to 24 hrs. Remove from fridge 1 hr before serving, dust with icing sugar, and serve with vanilla cream.

10 (1 1/2 ounce) Godiva dark chocolate bars, chopped
1 1/2 cups sugar
1 1/2 teaspoons instant coffee granules
3/4 cup boiling water
3/4 cup butter, softened
6 eggs, at room temperature
1 tablespoon vanilla extract
1 1/2 cups frozen unsweetened raspberries
1/2 cup sugar
1 tablespoon Chambord raspberry liquor
1 1/2 cups heavy cream
2 tablespoons sugar
1 1/2 teaspoons vanilla extract
fresh raspberry, for garnish

Steps:

  • Preheat oven to 350°F.
  • Position rack in lower third of the oven.
  • Butter the bottom and sides of a 9"x2" round springform pan.
  • Line bottom of pan with round of parchment or waxed paper and butter paper.
  • In a food processor fitted with metal blade, place chocolate, sugar, and coffee.
  • Cover and process for 15-20 seconds, until finely ground.
  • With motor running, pour boiling water through the feed tube.

  • Cook over medium heat stirring constantly with wooden spoon until sugar is completely dissolved and berries are soft.

  • Add liqueur, cover and refrigerate.

2 cups frozen mixed berry, thawed
2 tablespoons cornstarch
2 tablespoons granulated sugar
1 sheet frozen puff pastry, thawed
2 tablespoons honey
1 tablespoon warm water
¼ cup powdered sugar, for dusting

Steps:

  • Position an oven rack in the bottom third of the oven. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Fill a small saucepan with about an inch of water and bring to a strong simmer. Place a medium heatproof bowl over the pot (making sure the bottom isn't touching the water) and add the chocolate chips. Melt, stirring often, until completely smooth, about 2 minutes. Remove the pot from the heat but leave the bowl sitting over the water so the chocolate stays warm. Alternatively, microwave the chocolate chips in 30-second intervals, stirring between, until melted and smooth.
  • In a medium bowl, toss the thawed berries with the cornstarch and granulated sugar until fully coated.

1 pinch salt
3/4 cup butter
1/3 cup cocoa powder

1 cup whipping cream
1 tablespoon Grand Marnier
2 cups fresh raspberries

  • Grease a 9" springform pan and line with parchment paper. In small bowl, combine almonds, flour and salt. Set aside.
  • Melt butter in saucepan and stir in cocoa and sugar.

1 cup sugar
2 eggs

⅓ cup cocoa powder
8 ounces cream cheese (softened)
1 cup powdered sugar

8 ounces cool whip (1 container, (lite is fine if you want to use it))

Steps:
