2 cups white sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
¼ cup finely chopped walnuts
1 teaspoon ground cinnamon

½ cup milk
1 cup finely grated carrots

Steps:

  • Preheat the oven to 400 degrees F.
  • Beat the sugar, oil, and vanilla together in the bowl of an electric mixer fitted with a paddle attachment. Add the eggs, 1 at a time. 1 1/4 cup vegetable oil
1 1/4 cup low fat buttermilk (at room temperature)
4 eggs (at room temperature)

6 ounces full fat cream cheese (at room temperature)
3 cups powdered sugar (sifted to remove lumps)
1/4 teaspoon vanilla extract
2 tablespoons half and half cream ((or heavy cream))
