KING ARTHUR FLOUR: THE BEST FUDGE BROWNIE EVER

King Arthur Flour: the Best Fudge Brownie Ever image

I was about to toss the empty flour bag when the word "brownie" jumped out at me. Yeah, I know "who needs ANOTHER brownie recipe?"...those of us who have a cookbook devoted exclusively to chocolate or brownies, that's who! =D

Categories     Bar Cookie

Time 1h5m

Yield 24 serving(s)

Number Of Ingredients 10

1 cup butter
2 1/4 cups sugar
1 1/4 cups Dutch-processed cocoa powder
1/2 teaspoon salt (1 tsp if using unsalted butter)
1 teaspoon baking powder
1 tablespoon vanilla extract
4 large eggs
1 1/2 cups king arther unbleached all-purpose flour
2 cups chocolate chips
1/2-3/4 cup chopped pecans (or favorite) (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 9x13 pan.
  • In a medium sized microwave-safe bowl or in a saucepan, melt the butter on low heat, then add the sugar and stir to combine.
  • Return the mixture to the heat or microwave briefly, just until it's hot but not bubbling. It will become shiny looking as you stir it. Heating the buter and sugar a second time will dissolve more of the sugar, which will yield a shiny top crust on your brownies.
  • Transfer the mix to a mixing bowl.
  • Stir in the cocoa, salt, baking powder, and vanilla.
  • Add the eggs, beating till smooth; then add teh flour and chips and nuts if using. Beat until well combined.
  • Spoon the batter into the prepared pan.
  • Bake the brownies for 28-30 minutes, until a cake tester inserted in the center comes out clean or with just a few crumbs clinging to it.
  • The brownies should feel set both around the edges and in the center.
  • Remove from the oven, and after 5 minutes loosen the edges with a table knife, this will help preven the brownies from sinking in the center as they cool.
  • Cool completely before cutting and serving.

THE BEST FUDGE BROWNIES EVER

THE BEST FUDGE BROWNIES EVER image

Categories     Chocolate     Dessert     Bake     Kid-Friendly     Quick & Easy

Yield 24 brownies

Number Of Ingredients 9

1 cup (8 oz.) butter
2 1/4 cups sugar
1 1/4 cups Dutch-process cocoa
1/2 tsp. salt (increase to 1 tsp. if using unsalted butter)
1 tsp. baking powder
1 tbsp. vanilla extract
4 large eggs
1 1/2 cups (6 1/4 oz.) all-purpose flour
2 cups (12 oz. bag) chocolate chips

Steps:

  • Preheat oven to 350. Lightly grease a 9x13 in. pan. In a medium-sized, microwave-safe bowl or a saucepan over low heat, melt butter, then add sugar and stir to combine. Return mixture to heat (or microwave) briefly until hot but not bubbling. It'll become shiny and sugar will dissolve as you stir. Transfer to a mixing bowl. Stir in the cocoa, salt, baking powder, and vanilla. Add the eggs, beating until smooth; then add the flour and chips, beating until well combined. Spoon the batter into the prepared pan. Bake the brownies for 28-30 minutes, until a toothpick inserted in the center comes out dry. The brownies should feel set both on the edges, and in the center. Remove from the oven, and after 5 minutes loosen the edges with a table knife. Cool completely before cutting and serving.

Tips:

  • Use a heavy-bottomed saucepan: This will help to distribute the heat evenly and prevent the fudge from burning.
  • Don't overcook the fudge: The fudge is done when it reaches 234°F (112°C) on a candy thermometer. If you overcook it, it will become grainy and crumbly.
  • Let the fudge cool completely before cutting it: This will help to prevent it from crumbling.
  • Store the fudge in an airtight container at room temperature: The fudge will keep for up to 2 weeks.
  • Add your favorite mix-ins: You can add chopped nuts, dried fruit, or even chocolate chips to your fudge. Just be sure to add them after the fudge has been removed from the heat.
  • To make marble fudge, divide the fudge into two parts after it has been cooked. Add different colors of food coloring to each part, then swirl them together.
  • To make peanut butter fudge, add 1/2 cup of peanut butter to the fudge after it has been removed from the heat. Stir until well combined.

Conclusion:

Fudge is a delicious and easy-to-make treat that can be enjoyed by people of all ages. With just a few simple ingredients, you can create a smooth, creamy, and decadent fudge that will satisfy your sweet tooth. So next time you're looking for a special dessert to make, give fudge a try!
