Provided by CHEFSINGLEDAD

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness

4 slices prosciutto
½ cup white wine
½ cup chicken broth
¼ cup olive oil
1 tablespoon freshly ground black pepper

  • Bake 25 minutes in the preheated oven, until chicken juices run clear. Remove from baking dish, reserving sauce, and allow to stand 5 minutes.

Tips:

  • Choose the right chicken: For the best flavor, use bone-in, skin-on chicken breasts or thighs. The bones and skin help keep the chicken moist and flavorful.
  • Use fresh rosemary: Fresh rosemary has a more intense flavor than dried rosemary. If you only have dried rosemary on hand, use about half the amount called for in the recipe.
  • Don't overcrowd the pan: When searing the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Cook the chicken until it's golden brown: Sear the chicken over medium-high heat until it's golden brown on all sides. This will help to seal in the juices and prevent the chicken from drying out.
  • Use a meat thermometer: To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: Once the chicken is cooked, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Rosemary chicken is a delicious and versatile dish that can be enjoyed for lunch, dinner, or even a light snack. With its crispy skin, tender meat, and flavorful rosemary sauce, this dish is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give rosemary chicken a try. You won't be disappointed!
