CHEESY, SPICY BLACK BEAN BAKE

Cheesy, Spicy Black Bean Bake image

Whether or not you've fallen for this cheesy white-bean tomato bake, we'd like you to meet its bolder counterpart, smoky and spiced, with lots of melty cheese. Black beans shine in a deep-red mixture of fried garlic, caramelized tomato paste, smoked paprika and cumin. The whole skillet gets coated in a generous sprinkling of sharp Cheddar or Manchego cheese, then baked until melted. The final result is what you hope for from a really good chili or stew, but in a lot less time. For a spicier rendition, add a pinch of cayenne with the paprika, or douse the final skillet with hot sauce. Serve with tortillas, tortilla chips, rice, a baked potato or fried eggs.

Time 15m

Yield 4 servings

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil
5 garlic cloves, peeled and sliced
1/4 cup tomato paste
1 1/2 teaspoons smoked paprika
1/4 teaspoon red-pepper flakes
1 teaspoon ground cumin
2 (14-ounce) cans black beans, drained and rinsed
1/2 cup boiling water
Kosher salt and black pepper
1 1/2 cups grated Cheddar or Manchego cheese (from about a 6-ounce block)

Steps:

  • Heat the oven to 475 degrees. In a 10-inch ovenproof skillet, heat the olive oil over medium-high. Fry the garlic until lightly golden, about 1 minute. Stir in the tomato paste, paprika, red-pepper flakes and cumin (be careful of splattering), and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  • Add the beans, water and generous pinches of salt and pepper, and stir to combine. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you'd like, run the skillet under the broiler for 1 or 2 minutes. Serve immediately.

BLACK BEAN DIP

Delicious, healthy and easy-to-make black bean dip.

Provided by Jennifer Segal

Categories     Appetizers

Time 20m

Yield Makes about 3 cups

Number Of Ingredients 10

¼ cup extra virgin olive oil
2 small yellow onions, chopped
4 cloves garlic, peeled and chopped into large chunks
2 jalapeño peppers, seeded and chopped*
2 (15.5 ounce) cans black beans, rinsed and drained
1½ teaspoons salt
½ teaspoon ground cumin
2 tablespoons fresh lime juice, from one lime, plus more if desired
3 tablespoons water
¼ cup fresh chopped cilantro, plus more for garnish (optional)

Steps:

  • Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
  • Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
  • *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

Tips:

  • Choose ripe avocados: Make sure your avocados are ripe but not overripe. Ripe avocados will be dark green or black in color, and will yield to gentle pressure when squeezed. If your avocados are too hard, let them ripen at room temperature for a few days before using.
  • Use fresh lime juice: Fresh lime juice will give your dip a brighter, more flavorful taste than bottled lime juice. If you don't have fresh limes on hand, you can use bottled lime juice, but be sure to add a little extra to compensate for the lack of flavor.
  • Don't over-process the dip: Be careful not to over-process the dip in your food processor or blender. You want the dip to be smooth, but not so smooth that it loses its texture. A few small chunks of avocado and manchego cheese are fine.
  • Serve the dip immediately: Guacamole is best served immediately after it is made. The longer it sits, the more the avocado will brown and the dip will lose its fresh flavor.

Conclusion:

Black bean and manchego dip is a delicious and easy-to-make appetizer or snack. It is perfect for parties, potlucks, or simply enjoying at home. The dip is creamy, flavorful, and packed with protein and healthy fats. It is also a good source of fiber and vitamins. So next time you are looking for a healthy and tasty dip, give black bean and manchego dip a try. You won't be disappointed!
