1 tablespoon mayonnaise
¼ teaspoon celery seed
2 slices bread
1 tablespoon mashed leftover sweet potato casserole with marshmallow topping
1 tablespoon gravy
1 tablespoon dry leftover stuffing
¼ cup shredded leftover cooked turkey
1 tablespoon coarsely chopped leftover green bean casserole
1 tablespoon chopped French-fried onions

Steps:

  • Mash cranberry sauce in a bowl with a fork until smooth. Add mayonnaise and celery seed; mix thoroughly. Spread sauce over bread slices.

2 slices sourdough bread (or any favorite bread) or 2 slices white bread (or any favorite bread)
1/2 tablespoon butter, softened
2 ounces cooked turkey
1/4-1/2 cup prepared stuffing
2 slices cheddar cheese
ground black pepper, to taste

Steps:

  • Pre-heat panini grill to medium-high. Warm leftover turkey and stuffing in the microwave.
  • Butter 1 side of each slice of bread, lay butter-side down on your work surface.
  • On one slice of bread, layer ingredients in the following order: 1 slice cheese, turkey, stuffing, black pepper (if desired), 1 slice cheese, top piece of bread, with buttered sides facing out.

1 tablespoon shredded Cheddar cheese, or to taste

Steps:

As we were enjoying our new sandwich creation, Mr. Cookgirl suggested next time stirring in a little bit of Tabasco 'Chipotle" sauce to the mayo; or maybe substitute creamy horseradish...?

focaccia bread (enough for 2 sandwiches)
vegan mayonnaise, for spreading
3 -4 slices tempeh bacon, strips (store bought such as Lifelight brand 'Fakin' Bacon or homemade ( Smoky Tempeh Bacon)
1/4 cup sliced red bell pepper (In lieu of tomatoes which taste terrible this time of year. Use *fresh toms* when they are in season)
loose leaf lettuce, of choice (we tried mixed spring greens and some micro greens)
fresh cilantro, minced
cracked black pepper, to taste

  • Slice the foccacia in half and toast or (pan) grill if desired.
