1/3 cup Kahlua
2 tbsp unflavored gelatin
1/2 cup milk, heated to boiling
2 eggs
1/2 cup sugar
2/3 cup vodka
1 1/2 cup whipping cream

15 graham crackers or 20 chocolate wafers
1/4 cup melted butter
2 tbsp Kahlua

Steps:

  • FILLING INSTRUCTIONS: Put first three ingredients into blender container; covered and process at "low" until gelatin is dissolved. Remove feeder cup; add eggs, sugar and vodka. Pour into large bowl and chill 15 minutes, until lightly thickened. Stir occasionally to keep smooth. Whip cream until soft peaks form. Fold gelatin mixture and cream together thoroughly. Pour into crumb crust and chill until set, about 1 hour. CRUST INSTRUCTIONS: Break 8 graham crackers or 10 wafers into blender container; cover and process at high speed until crumbled. Empty into 9-inch pie pan and repeat with remaining crackers. Add butter and Kahlua to crumbs, mixing well. Press into bottom and sides of pie pan. Cool at least 30 minutes before filling.

Tips and Tricks:

  • Choose ripe and fresh peaches: Using ripe and juicy peaches will enhance the overall flavor of the pie.
  • Blanch the peaches: Blanching the peaches helps remove the skin easily and prevents the peaches from turning brown.
  • Use a sharp knife for slicing: Slicing the peaches evenly and thinly will help them cook evenly in the pie.
  • Don't overmix the dough: Overworking the dough can result in a tough and dry crust. Mix it just until the dough comes together.
  • Chill the dough before rolling: Chilling the dough before rolling makes it easier to work with and prevents it from shrinking too much in the oven.
  • Brush the edges of the pie crust with egg wash: Brushing the edges of the pie crust with egg wash helps create a golden brown and glossy crust.
  • Bake the pie until the crust is golden brown and the filling is bubbling: The pie is done baking when the crust is golden brown and the filling is bubbling around the edges.
