3 cups fresh or frozen blackberries, thawed
1 cup sugar
1/4 teaspoon salt
1 can (12 ounces) evaporated milk
2 tablespoons lime juice
1 teaspoon rum extract
1/2 teaspoon citric acid

Steps:

  • Place blackberries, sugar and salt in a food processor; process until smooth. Press through a fine-mesh strainer into a bowl; discard seeds and pulp. Stir remaining ingredients into puree., Fill cylinder of ice cream maker no more than two-thirds full; freeze according to the manufacturer's directions. Transfer sherbet to freezer containers, allowing headspace for expansion. Freeze until firm, 8 hours or overnight.

175g ripe strawberries or 200g/8oz raspberries (or use a mix of 100g/4oz strawberries and 100g/4oz raspberries)
about 6 ice cubes
juice of ½ lime
1 tbsp lemon juice
100ml white rum
small lime slice to serve

  • If using raspberries, blend these first to a purée then rub through a sieve to extract the pips. Put a handful of ice cubes in a powerful blender and crush. 1/8 teaspoon salt

1 cup water
1 1/2 pounds frozen unsweetened blackberries, thawed, juices reserved
2 tablespoons fresh lemon juice
1/2 small watermelon
16 fresh blackberries

  • Stir sugar and 1 cup water in small saucepan. Bring to boil over high heat, stirring until sugar dissolves. Boil 1 minute. Transfer syrup to large bowl. Chill until syrup is cold, about 3 hours.
