Steps:

  • Preheat oven to 400°F. Pierce potatoes with fork. Place on oven rack; bake until cooked through, about 1 hour 15 minutes. Transfer to baking sheet; cool 5 minutes. Cut off top third of each potato. Scoop flesh from bottoms into bowl, leaving 1/4-inch-thick shell. Scoop flesh from tops; add to bowl. Discard tops.

1 tablespoon extra-virgin olive oil, plus more for brushing
1 1/2 pounds boneless top sirloin steak (about 1 1/2 inches thick)
Kosher salt and freshly ground pepper
3 ounces soft blue cheese (about 3/4 cup)
3 tablespoons sour cream
3/4 cup chopped fresh parsley, chives and/or scallions
1 shallot, sliced, or 2 tablespoons diced red onion
1/2 cup ruby port or red wine
1 cup low-sodium beef broth
3 tablespoons cold unsalted butter

Steps:

  • Preheat the oven to 425 degrees F. Pierce the potatoes with a fork, then microwave until easily pierced but slightly firm in the center, about12 minutes. Brush with olive oil and bake directly on the oven rack until tender with crisp skins, about 10 minutes. Keep warm.
  • Season the steak with salt and pepper and rub with 1 tablespoon olive oil. Mix the blue cheese, sour cream and herbs in a bowl.
  • Heat a cast-iron skillet over medium-high heat. Sprinkle the skillet with 1/2 teaspoon salt and drizzle lightly with olive oil, then add the steak and weigh it down with a heavy skillet; cook until browned, 4 minutes. 5 lbs potatoes, peeled & sliced 1/4 " thick
3 teaspoons salt, divided
1/2 teaspoon black pepper
1 1/2 teaspoons minced fresh rosemary
3/4 cup crumbled blue cheese
3/4 cup grated parmesan cheese
1 cup sour cream
2 cups heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • Butter 9x13 baking dish.
  • Toss sliced potatoes with 2 tsp salt, pepper and rosemary.
  • Toss cheeses together.
  • (Feel free to use more than 3/4 cup of each- I do!) Layer half the potatoes in the dish and sprinkle with half the cheese then top with remaining potatoes.

2 teaspoons finely chopped fresh rosemary

2 cups milk, warmed
4 ounces blue cheese, broken into small pieces, plus extra for finishing

1 Fresno chile, minced
1/2 bunch fresh parsley, torn

  • For the potatoes: Preheat the oven to 425 degrees F.

  • Preheat an outdoor grill for high heat and lightly oil the grate.

4 pieces beef tenderloin, 1 1/2 inches thick

1 large sheet frozen puff pastry dough, defrosted (recommended: Du Four)
1 bundle watercress, chopped
8 ounces blue cheese get a drier blue that will crumble easily
1 egg beaten with a splash of water
2 vine-ripe tomatoes, halved
1/2 cup Caesar style or garlic flavor large croutons, crushed or processed into crumbs
1/4 cup finely chopped parsley leaves
1 large bundle broccolini, trimmed
2 tablespoons butter
2 to 3 tablespoons finely chopped fresh dill

Steps:

  • Preheat the oven to 425 degrees F. Preheat a cast iron skillet over medium-high heat.
  • Put the potatoes in a sauce pot and cover with water. Bring to a boil over medium heat, salt the water and cook the potatoes until tender.

Cover a baking sheet with parchment, arrange the parcels on the baking sheet and brush them with the egg wash, using a pastry brush. Bake until deep golden, about 12 minutes.   • Put the broiler on high.

When the broiler is hot, put the tomatoes in the center of oven and broil until bubbly and the crumbs are brown, about 3 to 4 minutes.
  • Salt the boiling water and add the broccolini spears. Cook for 3 to 4 minutes, then drain.
  • Drain potatoes and put them back into the hot pot with the butter, the dill and the remaining parsley. Season with salt and pepper, to taste, and toss to combine.

3 pounds sweet potatoes (about 6)
3/4 cup (1 1/2 8-ounce packages) cream cheese, room temperature
1/4 cup (1/2 stick) unsalted butter, cut into 1" cubes, room temperature
Kosher salt, freshly ground pepper
1/4 cup mild blue cheese
1/4 cup store-bought candied pecans

Steps:

  • Preheat oven to 350°F. Roast sweet potatoes on a rimmed baking sheet until tender, about 1 hour. Let cool slightly.
  • Remove skins and transfer sweet potatoes to a large heavy saucepan over low heat. Add cream cheese and butter. Mash until well blended and creamy. Season with salt and pepper. Stir over low heat until hot.

1 red onion, diced
4 garlic cloves, minced
1/4 cup vermouth or 1/4 cup white wine

1/2 teaspoon dried herbs (rosemary, thyme, oregano or parsley)
8 cups arugula, washed and spun dry
1/2 cup milk
1/2 lb blue cheese, crumbled
6 cups mashed potatoes

Steps:

  • In a large pan heat oil over medium high heat. Add onions, and garlic cook about 3-4 minutes the pan.
  • Deglaze the pan with vermouth.
  • Add salt, pepper flakes, herbs, nutmeg and arugula.
  • Remove to a dish and set aside.
  • In the same pan heat milk add cheese to melt.
  • Add potatoes and mix together.
  • Toss in the wilted arugula.
  • Season with additional salt and pepper if needed.

  • Combine potatoes and turnips in large bowl. Season with salt and pepper. Arrange half of potato mixture in 13x9x2-inch glass baking dish. Pour half of cream mixture over. 1 small onion

1 tablespoon butter
1/3 cup pecans
1 tablespoon light brown sugar

1 1/2 teaspoons honey
1 garlic clove
2 tablespoons blue cheese
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Peel sweet potatoes and cut into thin wedges.
  • Peel and chop onion.
  • Preheat oven to 375 degrees.
  • In 15 x 10 pan place potatoes, onion and drizzle with 2 T olive oil.
  • Salt and pepper to taste.
  • Bake for 30-35 minutes, stirring once.
