1 pound spiral tube-shaped pasta
2 tablespoons (1/4 stick) butter
1/4 cup all purpose flour
2 cups whole milk
1 cup whipping cream
3 cups grated cheddar cheese
1 1/2 cups crumbled blue cheese
1 tablespoon minced fresh chives

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally, about 8 minutes. Drain.
  • Meanwhile, melt butter in heavy large saucepan over medium-low heat. Add flour. Cook 1 minute, stirring constantly (do not allow to brown).
  • Gradually whisk in milk and cream. Simmer until mixture thickens slightly, whisking occasionally, about 3 minutes. Reduce heat to low. Add grated cheddar cheese and 1 cup crumbled blue cheese. Whisk until cheese melts, about 2 minutes. Season sauce to taste with salt and pepper.
  • Add cooked pasta to sauce; stir to coat. Transfer mixture to prepared baking dish. Sprinkle with remaining 1/2 cup blue cheese. Bake until sauce begins to bubble, about 25 minutes. Sprinkle with chives and serve.

1 lb farfalle pasta (farfalle = bowtie) or 1 lb elbow macaroni (farfalle = bowtie)
2 tablespoons butter
2 tablespoons flour
1 1/3 cups milk
8 -10 ounces monterey jack cheese or 8 -10 ounces mozzarella cheese
1/2 cup blue cheese (I like Gorgonzola)
1/2 teaspoon black pepper
1 teaspoon hot sauce

Steps:

  • Boil pasta to al dente in salted water, drain, and set aside with a lid to keep warm.
  • In a medium saucepan, melt the butter over medium-low heat, add the flour and cook for about 3-5 minutes or until it smells nutty, stirring constantly.
  • Whisk in the milk and bring to a boil, stirring occasionally.
  • Remove from the heat and add the rest of the ingredients.

12 oz. rigatoni
2 slices crustless white bread
2 tsp. finely chopped thyme
1 small onion, finely chopped
1⁄2 cup flour
3 cups milk
2 cups heavy cream
12 oz. grated sharp cheddar
8 oz. roughly chopped cooked ham
(any variety will do)
3 oz. blue cheese, crumbled
1⁄2 cup minced flat-leaf parsley
1⁄4 tsp. hot sauce, such as Tabasco
4 scallions, finely chopped
1⁄4 freshly ground black pepper
1⁄8 freshly ground nutmeg

Steps:

  • 1. Grease a 2-qt. baking pan with 1 tbsp. butter; set aside. Bring a 6-qt.pot of salted water to a boil. Add pasta; cook until al dente. Drain pasta, rinse; set aside. Pulse bread into crumbs in food processor; mix with 4 tbsp. butter; set aside. 2. Heat oven to 400˚. Melt remaining butter in a 6-qt. pot over medium heat. Add thyme and onions; cook until soft, 6-8 minutes. Whisk in flour; cook 2-3 minutes. Whisk in milk and cream. Increase heat to medium-high; cook, whisking, until thick, 10-12 minutes. Whisk in salt, cheddar, ham, blue cheese, parsley, hot sauce, scallions, pepper, and nutmeg. Stir in pasta; add to pan; sprinkle with bread crumbs. Bake until bubbly, 30-40 minutes.
