1 1/4 cups coarsely chopped spinach
3/4 cup crumbled blue cheese
3/4 cup low-fat sour cream or 3/4 cup plain yogurt
1/2 cup light mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, melt butter over medium heat; add onions and cook, stirring frequently, for 5 minutes or until onions are tender.
  • Cover; reduce heat to low and cook, stirring occasionally, for 15 minutes or until golden brown.
  • Increase heat to medium. Add spinach and stir for 2-3 minutes or until wilted; remove from heat.

1 tablespoon olive oil
1 tablespoon butter
½ cup chopped onion
1 clove garlic, minced
1 cup chopped red bell pepper
1 jalapeno pepper - seeded, membranes discarded, and pepper chopped
1 ½ pounds pepperjack cheese, cut into cubes
1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
2 (12 fluid ounce) cans evaporated milk
¼ teaspoon salt
