BLUEBERRY CORDIAL

Simple. Cheap. No artificial anything. And Delicious! A wonderful cheap treat for your family's drink bottles. I created this after being unable to find a kid-friendly blueberry cordial recipe. I used frozen berries but fresh would do, of course! Time shown does not include the overnight steeping time, which is optional but advised to get the max flavour.

Time 30m

Yield 1 3/4 litres

Number Of Ingredients 4

4 cups sugar
4 cups boiling water
3 cups blueberries, frozen
4 teaspoons citric acid

Steps:

  • In a large saucepan combine everything. Simmer over medium heat and stir with wooden spoon to dissolve the sugar. Mash the berries as they soften, with the spoon, or a potato masher. I tried an immersion blender which worked ok but the masher was the most effective.
  • Once dissolved, let cool, then steep overnight in the refrigerator. This will get the max flavour from the berries.
  • Next day, strain into a bottle (clean softdrink is perfect). I used a funnel with a wire mesh strainer over the top, and poured a little at a time. Squeeze the juice from the pulp through the strainer. Set pulp aside - delicious with icecream!
  • To reconstitute to a delicious drink, try 1 part cordial to 5 or 6 parts water. This will depend on how sweet you like your drinks.
  • KEEP IN REFRIGERATOR.
  • It makes 1.75 litres which will creat about 12 litres of drink.

Number Of Ingredients 5

2 pkg 12-ounce each frozen raspberries
1 1/4 c sugar
2 lemons
4 c water
1 (5th) of vodka

Steps:

  • 1. Put unthawed raspberries in a saucepan. Add sugar. Cook over medium heat, stirring once in a while, for 20-25 minutes, until berries are thawed and sugar dissolved.
  • 2. With potato masher, mash berries and syrup thoroughly. Pour berry mixture into a wire strainer, making sure to extract all the juice by using the back of a wooden spoon to push it through. Discard pulp.
  • 3. Pour raspberry syrup into a pitcher. Squeeze lemons and strain juice. Add lemon juice to raspberry syrup. Boil water and add to raspberry syrup.
  • 4. Cool raspberry cordial to room temperature, then cool in fridge. When completely cooled add to the vodka and refridgerate again. When cordial is ready to serve, stir well.

Tips:

  • Use fresh, ripe blueberries for the best flavor.
  • Wash the blueberries thoroughly before using them.
  • Gently crush the blueberries to release their juices, but do not puree them.
  • Use a cheesecloth-lined colander to strain the blueberry juice.
  • Add sugar and water to the blueberry juice and bring to a boil, stirring constantly.
  • Reduce the heat to low and simmer for 10-15 minutes, or until the mixture has thickened.
  • Remove the cordial from the heat and let it cool slightly.
  • Stir in lemon juice and vanilla extract (optional).
  • Pour the cordial into a clean glass jar and seal tightly.
  • Store the cordial in a cool, dark place for up to 6 months.

Conclusion:

Blueberry cordial is a delicious and versatile drink that can be enjoyed on its own, mixed with sparkling water or lemonade, or used in cocktails and other recipes. It is also a great way to use up fresh blueberries. With its bright flavor and beautiful color, blueberry cordial is sure to be a hit at your next party or gathering.
