Bobby made a surprise visit to Buffalo's Anchor Bar, the legendary birthplace of Buffalo wings in 2007. He was armed with this recipe and ready for a throwdown. His opponent, Buffalo's "Wing King" Drew Cerza, kept his title, but Bobby's smoky chipotle wings gave Cerza a run for his money. This recipe is from the January/February 2010 Food Network Magazine.

Jicama sticks (instead of celery)

  • Stir together the yogurt, blue cheese, red onion, cilantro and salt and pepper in a bowl. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.;
  • Heat 2-inches of the oil in a large, high-sided pan until it reaches 375 degrees F on a deep-fry thermometer.
  • Stir together the flour, salt, pepper, to taste, 2 teaspoons ancho chili powder and garlic powder in a shallow bowl. Remove the mixture from the heat and whisk in the mustard, salt, honey, and butter until smooth. Add the wings to the mixture and toss to coat. Garnish with cilantro and serve with jicama sticks and blue cheese sauce.

Tips:

  • To achieve crispy wings, ensure the wings are completely dry before frying. Pat them dry with paper towels or let them air dry for 30 minutes.
  • Use a large pot or deep fryer to fry the wings in batches, avoiding overcrowding. This prevents the wings from steaming and helps them crisp up.
  • Maintain a constant oil temperature of 350°F (175°C) for even cooking. Use a kitchen thermometer to monitor the temperature.
  • Fry the wings in multiple stages to ensure they cook thoroughly. Start with a high temperature (400°F or 200°C) for 5-7 minutes to crisp the skin, then reduce the temperature to 350°F (175°C) and continue frying for an additional 10-12 minutes or until the internal temperature reaches 165°F (74°C).
  • For the blue cheese yogurt sauce, use full-fat yogurt for a creamy texture. Crumbled blue cheese adds a tangy flavor, while mayonnaise and sour cream contribute richness. Season the sauce with garlic powder, onion powder, cayenne pepper, and salt to taste.
  • Serve the wings hot with the blue cheese yogurt sauce, celery sticks, and carrot sticks for a complete appetizer or snack.
