2 tablespoons olive oil
4 red beets (½ inch diced (approx 1 ½ pounds))
2 carrots (½ inch diced)
1 large russet potato (peeled and ½ inch diced)
½ small green cabbage (shaved)
2 cloves garlic (minced)
4 cups vegetable broth
4 cups beef broth
2 tablespoons dill (fresh, minced)
2 tablespoons lemon juice (fresh)
1 teaspoon lemon zest
1 bay leaf
kosher salt (to taste)
black pepper (to taste)
sour cream (optional, for serving)

Steps:

2 cups shredded fresh beets
1 cup shredded carrots
1 cup chopped onion
2 cups water
1/2 teaspoon salt
2 cans (14-1/2 ounces each) beef broth
1 cup shredded cabbage
1 tablespoon butter
1 tablespoon lemon juice
Optional: Sour cream and chopped chives or fresh dill sprigs

Steps:

2 pounds red beets with greens, beets peeled and cut into 1/2-inch dice, greens coarsely chopped
1 pound meaty beef shin bones
1 pound green cabbage, shredded
1 14-ounce can chopped tomatoes with their juice
1 large onion, quartered and thinly sliced
1 bay leaf
Salt to taste
1 pound large waxy potatoes, quartered
Freshly ground white pepper to taste
Balsamic vinegar to taste, for drizzling

Steps:

  • In a soup pot, combine beets (not greens), bones, cabbage, tomatoes, onion, 8 cups water, bay leaf and salt; bring to a boil. Reduce heat to medium-low and simmer 1 1/2 hours.
  • Meanwhile, put potatoes in a medium saucepan of water. Bring to a boil and simmer until tender, about 20 minutes. Using a slotted spoon, transfer potatoes to a cutting board. Add chopped greens to boiling water and cook until tender, about 3 minutes. Drain and rinse in cold water. Peel potatoes and cut into 1/2-inch dice.
  • Discard bay leaf. Remove bones, remove meat from bones, chop meat and return meat to soup. Taste and add salt if needed. Ladle soup into bowls and season with white pepper. Top with potatoes and greens, and drizzle with balsamic vinegar.

5 lbs fresh beets (with the tops on)
cold water (to cover the beets by at least 4-6 inches)
2 -3 large onions
3 tablespoons salt
1/4-1/2 cup lemon juice, depending on taste
white pepper (optional/to taste)
1/4 cup honey (optional)
sour cream (optional)

Steps:

  • Cut off beet greens from the beets but leave about an inch or two of the tops on the beets.
  • **Option:mince removed beet tops to add later.
  • Scrub the beets well.
  • In a large pot, add beets and cover with cold water (about 3/4 full).
  • Bring the water to a boil and boil this for about 15-25 minutes until the beets are cooked.
  • Remove the beets from the water; save the water from the beets ("beetjuice").
  • Remove the skins from the beets.
  • Strain the"beet juice" (through a cheese cloth lined sieve) into a pot.

1 pound beef shanks
5 whole peppercorns
2 bay leaves
1 teaspoon salt
1/2 teaspoon dill weed
3 medium uncooked beets, peeled and shredded
2 tablespoons vegetable oil, divided
2 teaspoons white vinegar
2 medium potatoes, peeled and cubed
2 medium carrots, sliced
1 cup shredded cabbage
2 tablespoons minced fresh parsley
1 medium onion, chopped
1 tablespoon all-purpose flour
2 medium tomatoes, chopped
1/2 cup sour cream

Steps:

  • Place the first six ingredients in a large soup kettle or Dutch oven; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until beef is tender. Whisk into soup. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. add tomatoes. process soup in small batches in a blender or food processor; pour into a large saucepan. Add beef; heat through. Garnish with sour cream.

2 medium onions, chopped small
19 fluid ounces canned tomatoes, including liquid (crush tomatoes)
16 cups water
1 tablespoon salt
5 medium potatoes, peeled and quartered
3 large carrots, peeled and chopped small
1 medium red beet, scrubbed and cut in half
1 cup half-and-half cream
4 cups chopped young beets, with tops
4 medium potatoes, peeled and cubed 1/2 inch
3 cups chopped fresh spinach
1 medium green pepper, seeded and diced
1 medium sweet red pepper, seeded and diced
1 1/2 cups diagonally cut green beans (about 1 inch long)
1 stalk celery, chopped small
2 cups cauliflower florets
1/2 cup chopped green onion
1/2 cup finely chopped fresh dill weed or 3 tablespoons dried dill weed
1 tablespoon lemon juice

  • In a large frying pan, melt 1/4 cup of margarine or butter.
  • Add chopped onions and saute' for 5 minutes but do not brown.

  • Trim tail ends of the young beets, and scrub only, then cut into small pieces and add to soup pot.
  • Chop beet greens into medium size pieces and add to soup pot.
  • Add cubed potatoes, spinach greens, green and red peppers, green beans, chopped celery, cauliflower florets and cook until vegetables are just tender, about 20 minutes.
  • Add mashed potato mixture, tomato/onion mixture, green onions, fresh dill weed and bring to boil.
  • Remove from heat.
  • Add lemon juice and stir well.
  • Adjust spices to taste.
  • Cover and let sit for 15 minutes before serving.
  • Refrigerate any unused portion of soup.
