GRILLED BREAD AND TOMATO SALAD

Yield Serves 6 to 8

Number Of Ingredients 11

1/2 cup (1 stick) unsalted butter
2 garlic cloves, minced
8 ounces day-old Italian bread, cut into 3/4-inch-thick slices
6 dead-ripe meaty tomatoes, cored, seeded, and cut into quarters
1/4 cup minced red onion
1/3 cup fruity extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh tarragon
1/2 teaspoon kosher salt
7 or 8 grindings black pepper

Steps:

  • 1. Place a small saucepan over medium heat and add the butter. When it's about half melted, throw in the garlic and cook for 3 to 4 minutes, allowing the garlic to take on a little bit of color. Remove from the heat and brush this mixture on both sides of each slice of bread.
  • 2. Oil the grill racks. Preheat your grill using all burners set on high and with the lid closed for 10 to 12 minutes.
  • 3. Place the bread on the grill, close the lid, and cook, turning once, until well marked. Careful here; depending on the moisture content of the bread, this could happen as quickly as 2 minutes (or about 1 minute on each side), but it usually takes about 4 minutes. Place the tomatoes on the grill, close the lid, and cook for a few minutes per side.
  • 4. Remove the bread to a cutting board, cut into 3/4-inch cubes, and place in a large mixing bowl. Add the tomatoes, onion, olive oil, vinegar, herbs, salt, and pepper. Toss gently with your hands to combine. Taste and adjust the seasonings if you desire. Serve at room temperature.

Yield Serves 6

Number Of Ingredients 15

For Salad
1/2 pound crusty peasant-style bread, torn into bite-size pieces (about 6 cups)
3 large vine-ripened tomatoes (about 1 1/2 pounds), cut into 3/4-inch pieces
3/4 cup finely chopped inner (very pale green) celery ribs and leaves
1/3 cup small brine-cured black olives such as Gaeta or Niçoise, halved and pitted

1/3 cup extra-virgin olive oil
For Chicken
3 whole skinless boneless chicken breasts (about 2 pounds total), halved
vegetable oil for brushing chicken
1 cup fresh basil leaves, torn into pieces
Garnish: whole celery leaves

Steps:

  • Make Salad:
  • Preheat broiler.

  • Stir basil into salad. Slice chicken on the diagonal and serve with salad. Garnish each serving with whole celery leaves.

LEBANESE BREAD AND TOMATO SALAD

Lebanese Bread and Tomato Salad image

Categories     Salad     Tomato     Side     Vegetarian     Summer     Gourmet     Vegan     Pescatarian     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 4 to 6 servings

Number Of Ingredients 8

2 (6-inch) pita loaves with pockets
1 1/2 tablespoons fresh lemon juice
1 teaspoon pomegranate molasses (optional)
1/3 cup extra-virgin olive oil
1 cup fresh flat-leaf parsley, torn if large
1/2 cup fresh mint, torn if large
1/4 cup purslane leaves (optional)
2 pounds tomatoes, cut into wedges

Steps:

  • Preheat oven to 375°F.
  • Split pita loaves and toast on a baking sheet in middle of oven until golden, 10 to 15 minutes. Cool pitas on a rack and break into bite-size pieces.
  • While pitas are toasting, whisk together lemon juice, pomegranate molasses, and salt to taste in a serving bowl, then whisk in oil until emulsified.
  • Add pitas to dressing with remaining ingredients and toss to combine.

Tips:

  • Use a variety of tomatoes for a more complex flavor. Try using heirlooms, cherry tomatoes, or Roma tomatoes.
  • Choose a good quality bread that is slightly stale. This will help it to better soak up the juices from the tomatoes.
  • If you are using a loaf of bread, cut it into thick slices. This will help it to hold up better in the salad.
  • If you are using a baguette, cut it into thin slices. This will make it easier to eat.
  • Toast the bread before adding it to the salad. This will give it a nice crispy texture.
  • Use a light and flavorful dressing. A simple vinaigrette made with olive oil, vinegar, and herbs is a good option.
  • Add some fresh herbs to the salad for extra flavor. Basil, oregano, and thyme are all good choices.
  • Serve the salad immediately or chill it for later. It is best when eaten fresh, but it can be stored in the refrigerator for up to 2 days.

Conclusion:

Bread and tomato salad is a simple but delicious dish that is perfect for summer. It is easy to make and can be tailored to your own taste. With a few simple ingredients, you can create a refreshing and flavorful salad that is sure to please everyone at your table.
