This recipe originally comes from Kosher by Design by Susie Fishbein. I've been making this challah every week for the last two months, and it makes a delicious, rich challah. I don't use the bread machine method, making the dough in my Kenwood mixer and giving the final knead by hand, then braiding the challah and baking it in the oven. I'm posting this as a bread machine recipe at the request of Miraklegirl. BTW, I don't use all the water called for in the recipe, I usually add a bit at a time until I'm happy with the consistency of the dough.

1 1/2 cups water
5 large egg yolks
1 1/8 teaspoons salt
1/3 cup oil
4 1/4 cups all-purpose flour (I use bread flour) or 4 1/4 cups bread flour (I use bread flour)
1/2 cup sugar (I use brown sugar)
1 tablespoon active dry yeast
1 large egg, lightly beaten
sesame seeds or poppy seed

Steps:

  • Place the water, egg yolks, salt oil, flour, sugar and yeast in the bread machine pan, according to the manufacturer's directions.
  • Process the ingredients in the dough cycle.
  • Remove immediately when the machine beeps.
  • Preheat the oven to 350 degrees.
  • Divide the dough in half.

1 egg white
2 tablespoons olive oil (this is equivalent to 1/6 cup)
3 tablespoons honey (measure using the same spoon as the olive oil so it doesn't stick!)
1 tablespoon sugar
4 3/4 cups whole wheat flour
2 teaspoons active dry yeast (or one 1/4 oz. packet)
1/8 teaspoon salt
1 additional egg (optional)
sesame seeds (optional)

Steps:

  • Add water, eggs, olive oil, honey, sugar, and flour to the bread machine bowl in that order.
  • Make a well on top of the flour mound and add the yeast.
  • Add salt along the side of the flour mound.
  • Set your bread maker to run a "dough" cycle.

2 tablespoons honey
2 teaspoons bread machine yeast or instant yeast
Egg Wash:
2-3 large egg yolks
2 tablespoons water

Steps:

  • Lightly grease or line with parchment paper one or two baking sheets. Add warm water, egg, vegetable oil, salt, flour, sugar, honey and yeast to bread machine pan in the order recommended by manufacturer. Select the Dough Cycle of your machine. Start the cycle. When dough cycle is complete, remove dough from machine to a lightly floured work surface. Punch dough down and let rest for 5 minutes. If necessary, knead in enough flour to make dough easy to handle. Making 1 loaf: If making one 1 1/2-pound loaf, divide dough into 3 equal size pieces and roll each piece into 20-inch long rope. Place ropes on prepared baking sheet. Braid by bringing left rope under center rope; lay it down. Bring right rope under new center rope; lay it down. Repeat braiding to the end of loaf. Cover with plastic wrap and place a smooth cotton kitchen towel over plastic wrap and let loaf (s) rise in a warm, draft-free place until almost doubled in size, 45 to 50 minutes. If desired, sprinkle loaf (s) with sesame or poppy seeds and bake at 375 degrees F/190 degrees C for 25 to 30 minutes or until done (bread is done if it registers 190 degrees F/87 degrees C with instant-read thermometer). Tip: Cover bread with aluminum foil after 10 to 15 minutes of baking to prevent excess browning (for even browning when baking two loaves, switch positions of sheets halfway through baking). Remove bread from baking sheet and cool completely on wire rack. Storage: Bread may be frozen once cooled completely (2 hours). Wrap in aluminum foil, then place bread in a ziploc bag. Label and date. Bread can be frozen for up to 3 months. Thaw for 1 hour at room temperature before serving.

Okay, I think I've got my challah bread recipe adapted for the bread machine. Here goes.

BREAD DOUGH
1 c lukewarm milk
4 Tbsp softened butter (1/2 stick)
3 Tbsp granulated sugar
2 large eggs
1 tsp salt
3 c all purpose flour
2 tsp dry rapid rise yeast (1 pkg)
EGG WASH INGREDIENTS
1 large egg
1 Tbsp cold water
poppy seeds (optional)

Steps:

  • 1. Cut butter into small pieces, and place in saucepan with milk and sugar. Over medium heat bring to a boil. Remove from heat and set aside to cool to 110º-115º. NOTE: If milk is too hot, it will kill lthe yeast action. If you don't have a thermometer, test the milk on the inside of your wrist. It should be just barely lukearm. Sift flour and set aside.
  • 2. Whisk 2 eggs until light and frothy When milk is at proper temperature, add the eggs and salt to the milk and pour into bread machine pan.
  • 3. Carefullly pour flour into pan, making sure that all liquid is completely covered by flour. Make small indentation in center of flour and pour yeast there.
  • 4. OPTION ONE: Turn bread machine on to Dough cyclo. Machine will ding when dough cycle is complete. Remove dough from bread machine pan and place on floured work surface (waxed paper or cutting board). Cut dough into three equal pieces. Roll three pieces into long snakes about 18" long. Braid the snakes together into a loaf and tuck the ends under. Cover a large baking sheet with parchment paper and sprinkle with cornmeal. Transfer the braided loaf to the baking sheet. Cover loaf with a clean towel or cheesecloth and let rise until nearly doubled in size (about 1 hour).
  • 5. Preheat oven to 350º Whisk the remaining egg and 1 tablespoon cold water together until light and frothy. With basting brush, lightly baste loaf evenly with egg wash. Sprinkle immediately with poppy seeds to taste.
  • 6. Cook in middle rack of oven for 50-55 minutes until loaves are golden brown and sound hollow when bottoms are thumped. Cool completely on racks before wrapping. Be sure and sneak a piece with honeyed butter while it's still hot (for quality control purposes of course).
  • 7. OPTION TWO: ALTERNATE METHOD FOR BAKING BREAD COMPLETELY IN BREAD MACHINE: If you don't want to braid the dough, use this method. Follow instructions steps 1 and 2 above. Skip instructions steps 3 through 6 above Turn bread machine to basic cycle, crust to medium. When cycle is complete, remove from bread machine and brush the bread with egg wash (1 egg & 1 tablespoon of water whisked briskly). Place in 350º oven for 5 minutes to "seal" the egg wash. Or, you can skip the egg wash and just brush with melted butter (Either way is fine).

1 c raisins or chopped apricots
1 large egg, slightly beaten
2 Tbsp poppy seeds or sesame seeds for top of loaf

Steps:

  • 1. Follow directions for making dough in your bread machine. Using first 7 ingredients layer them in bread machine pan. Turn on machine. Add raisins or apricots when dough begins to form.
  • 2. When dough cycle is complete remove dough from machine. Divide in 2 halves. From each half form 3 ropes. Braid 3 ropes into a loaf. Repeat with second 3 ropes. Place loaves on greased cookie sheet. Cover. Let dough rise in a warm place for about 30 minutes.
