1 tablespoon EVOO
12 ounces bulk spicy breakfast sausage
2 tablespoons butter
1 onion, finely chopped

Freshly grated nutmeg
1/2 pound stale white or French bread, cubed (7 to 8 cups)
12 eggs
2 cups milk or half-and-half
1/4 cup Dijon mustard
2 cups shredded caciocavallo cheese or Parmigiano-Reggiano

Steps:

  • Defrost the spinach in the microwave, and then wring out any excess liquid.
  • Heat the EVOO in a skillet over medium-high heat. Brown and crumble the spicy breakfast sausage, and then remove the crumbles to a plate. Return the skillet to the heat. Reduce the heat a little and melt the butter. To the skillet, add the onions and garlic and cook to soften, 5 to 6 minutes. Then add the spinach and season with salt, pepper and a little nutmeg. Turn off the heat and combine with the sausage bits.
  • Arrange half of the bread in a casserole dish.
  • Whisk the eggs with the milk, Dijon and some salt and pepper.
  • Scatter half of the sausage-spinach mixture over the bread, top with half the cheese, pour over half the eggs, repeat. Cover and store in the fridge.
  • Bring the strata to room temperature for about 30 minutes before you bake. Preheat the oven to 350 degrees F with the rack in the center of the oven.

1 large onion, diced (about 2 cups)
3 garlic cloves, minced
3 cups (8 ounces) sliced mushrooms
Nonstick cooking spray
1 whole wheat baguette, crusts removed, cubed (about 5 cups)
8 eggs and 8 egg whites
2 cups low-fat milk
1 tablespoon Dijon mustard
10 ounces broccoli, steamed, cooled and chopped (or frozen, thawed)
1-ounce (1/3 cup) grated Parmesan
4-ounce (1 cup) part-skim mozzarella cheese
1/2 cup thinly sliced sun-dried tomatoes, reconstituted
1 tablespoon minced fresh thyme leaves

  • Heat 2 teaspoons of the oil in a nonstick skillet over medium heat. Add the onions and saute until translucent and beginning to brown, about 4 minutes. Add the garlic and continue to cook for another 1 minute. Transfer the onion mixture to a medium bowl and allow to cool. Heat remaining 2 teaspoons of oil in the skillet and saute the mushrooms until they release all of their water, about 6 to 7 minutes. Remove from heat and cool completely. 12 ounces breakfast sausage, casing removed
1 large onion, thinly sliced

One 12-ounce loaf sourdough bread, crusts removed, cut into 1-inch cubes, preferably stale (about 6 cups)
2 cups shredded Muenster cheese

Steps:

  • Butter a 9-by-13-inch baking dish.
  • Heat the olive oil in a large skillet over medium high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the onion to the skillet and cook over medium heat, stirring occasionally, until very soft and golden, 20 to 25 minutes. I found this recipe in Paula Deen's magazine. It calls for Canadian bacon, but I didn't have any available and a run to the market is over 30 minute drive, so used regular bacon, crumbled. It still turned out to be delicious. I think it would be the perfect dish for just any meal, don't just use this for breakfast or brunch, it made a fantastic dinner. This needs to be made ahead as it needs to sit from 8 hours to overnight, so make it before leaving for work, and come home to an easy cook meal.

I adapted this recipe from Cook's Illustrated. It sounds healthier than the other breakfast stratas with sausage and bacon (you don't have to tell anyone the truth!). It is so delicious, I had several requests for the recipe at a brunch before Christmas. Enjoy!

14 ounces French bread, sliced 1/2-inch thick
9 tablespoons unsalted butter, softened
8 medium shallots, minced
8 ounces mushrooms, sliced
20 ounces frozen chopped spinach, thawed and squeezed dry
1 cup dry white wine
12 ounces havarti cheese, sliced thin or 12 ounces grated gruyere cheese
12 large eggs
2 1/2 cups half-and-half
salt
ground black pepper

Steps:

  • Preheat oven to 225 degrees. Arrange bread slices in a single layer on 2 large baking sheets and bake until dry and crisp, about 40 minutes, turning slices over halfway through drying time. (Alternatively, leave slices out overnight to dry.) When cooled, butter slices on one side using 4 tablespoons of butter; set aside. (Note: I used Smart Balance® with just a thin coating on each slice).
  • Heat 3 1/2 tablespoons butter in large nonstick skillet over medium heat. Sauté shallots and mushrooms until shallots become fragrant and translucent, about 3 minutes.
  • Add spinach to skillet. Season with salt and pepper to taste and cook, stirring occasionally, until spinach and shallots are combined, about 3 minutes. Transfer to medium bowl; set aside.
  • Add wine to skillet, increase heat to medium-high, and simmer until reduced to 1/2 cup, 3 to 4 minutes; set aside.
  • Butter a 9x13-inch baking dish with remaining 1 1/2 tablespoons butter.
  • Arrange half the buttered bread slices, buttered-side up, in single layer in dish. Spread half of spinach mixture, then lay half of the cheese evenly over bread slices. Arrange remaining bread slices in single layer over cheese; spread remaining spinach mixture and the remaining cheese evenly over bread.
  • Whisk eggs in medium bowl until combined; whisk in reduced wine, half-and-half, 2 teaspoon salt, and pepper to taste. Pour egg mixture evenly over bread layers; cover surface flush with plastic wrap, weigh down (see note, below), and refrigerate at least 1 hour or up to overnight.
  • Remove dish from refrigerator and let stand at room temperature 20 minutes. Meanwhile, adjust oven rack to middle position and heat oven to 325 degrees. Uncover strata and bake until both edges and center are puffed and edges have pulled away slightly from sides of dish, 60 to 65 minutes (or about 50 to 55 minutes for halved recipe). Cool on wire rack 5 minutes; serve.
  • NOTE: By weighing down the strata, all of the bread is able to soak in the custard. To weigh down the assembled strata, two 1-pound boxes of brown or powdered sugar, laid side by side over the plastic-covered surface, make ideal weights. A gallon-sized zipper-lock bag filled with about 2 pounds of sugar or rice also works. This recipe halves easily; use one 8x8-inch baking dish greased with only 1 tablespoon butter and reduce the baking time as directed in step 8.
  • A word about substituting fat-free half-and-half: The second time I made this recipe, I used fat-free half-and-half. The strata was soggy, not like the original recipe, even though I baked it longer. I think the custard needed more fat from the half-and-half in order to set properly.
  • If you try this with fresh spinach, cook it first, squeeze it dry, then use it in place of frozen.

This can easily be a vegetation dish also. This dish is wonderful for lunch if you add chicken, asparagus and Swiss cheese. But, the breakfast strata brings back so many great memories, you just can't beat it!!

15 pieces white bread (break up into cubes)
5 eggs
2 cups milk
12 ounces shredded cheddar cheese
16 ounces ground Jimmy Dean sausage (browned)
5 slices bacon (optional)

Steps:

  • Spray baking dish with Pam.
  • Brown sausage and let it cool. Cook bacon and let it cool. Set both aside.
  • Mix eggs and milk in separate dish (make sure eggs are well beaten).
  • Add cubed bread, shredded cheese and cooled sausage to the egg and milk mixture.
  • Pour all ingredients (except bacon into the baking dish).
  • Add crumbled bacon to the top of the dish.
  • Bake on 350 degrees for 45 minutes. It will puff up pretty high, like a quiche. Let is set for about 25 minutes before serving. It will settle and fall a bit.

1 cup Milk
½ cup White Wine (I generally use a Sauvignon Blanc)
1 day-old French bread, sliced thin
8 oz. prosciutto, sliced thin (optional)
2 cups arugula leaves
3 tablespoons olive oil
1 lb of cheese (I use shredded mozzarella)
3 ripe tomatoes (I slice a container of cherry tomatoes instead)
½ cup pesto (recipe to follow, I generally use a cup instead of half)
4 eggs, beaten
½ cup half and half

Steps:

  • The day before, mix milk and wine in a shallow bowl and dip slices of bread and gently squeeze out most of the liquid. Place layer of bread in a 12" round corning ware dish or whatever your favorite casserole dish Cover bread layer with ham slices (if using), then arugula leaves dipped in the olive oil, then cover with some of the cheese, tomato slices, drizzle with pesto Repeat layers until dish is full. Beat eggs with Salt and Pepper and pour over layers. Cover and refrigerate overnight In the morning, pull out of the refrigerator and let container warm to room temperature (to prevent your dish from breaking in the oven when exposed to the heat) Drizzle with half and half and bake until browned for about 45 minutes at 350 degrees. The sides should start to bubble. Pesto: 2 cups fresh basil leaves ½ cup fresh mozzarella ½ cup extra virgin olive oil 1/3 cup pine nuts 3 medium sized garlic cloves, minced Salt and fresh ground black pepper Combine basil and pine nuts in food processor a few times, slowly add olive oil in a constant stream. Stop and scrape down the sides of food processor with rubber spatula. Add grated cheese and pulse again until blended. Add salt and pepper to taste. Makes 1 cup.

18 slices sandwich bread
3 cups bite-sized cooked ham
8 ounces shredded Cheddar cheese
8 ounces shredded Swiss cheese
6 eggs
3 cups milk
½ teaspoon onion salt
½ teaspoon dry mustard
3 cups crushed corn flakes
½ cup melted butter

Steps:

  • Grease a 9x12-inch baking pan with butter. Combine Cheddar cheese and Swiss cheese in a bowl.
  • Remove and discard bread crusts. Arrange 1/2 the bread on the bottom of the pan. Top evenly with 1/2 the ham and then 1/2 the cheese mixture. Repeat layers of bread, ham, and cheese mixture.
  • Combine eggs, milk, onion salt, and dry mustard in a bowl. Pour over layers in the baking pan, cover, and refrigerate strata 8 hours to overnight.
  • The next morning, preheat the oven to 375 degrees F (190 degrees C). Remove strata from the refrigerator and uncover.
  • Combine corn flakes and melted butter in a bowl and pour evenly over strata.
  • Bake in the preheated oven until set, 50 to 60 minutes. Remove from the oven and let strata sit for 10 minutes before serving.

3/4 cup white button mushrooms
6 eggs
2 cups half and half

2 cups shredded cheddar cheese (I use medium)
1/2 pound sausage

Steps:

  • In a medium saute pan, heat the olive oil and saute the onion, green pepper, and mushrooms until soft, about 7-8 minutes. Set aside.
  • If using sausage, brown it in a medium saute pan and drain.
  • If using veggie sausage, heat it in the microwave for a minute or so and crumble.
  • In a medium bowl, whisk the eggs, half and half, salt, and pepper.
  • Spray two approximately 4" x 8'' baking pans/casserole dishes with non-stick cooking spray.
  • Layer two slices of the bread in the bottom of each pan.
  • Sprinkle 1/4 of the veggies over the bread in each pan.
  • Spread half the crumbled sausage over the sausage version.
  • Sprinkle on 1/4 of the cheese over each.
  • Pour about 1/2 cup of the egg mixture over the top.
  • Add a layer of the remaining bread, two more slices each, then veggies, then sausage over the sausage side, then cheese.
  • Pour the rest of the egg mixture evenly over the top of each.
  • Cover tightly and refrigerate overnight, or for at least three hours.
  • In the morning, uncover and bake at 325 degrees for about 40 - 50 minutes, until set.

6-8 eggs
21/2 c. milk
1/2 c. heavy cream
Herbs to taste (dried oregano or thyme, fresh basil or parsley)
1/2 cups parmesan or romano, grated
1 lb (16 oz) spicy vegetarian sausage, sliced
2 large shallots or 1 bunch scallions, finely chopped
1 red or green pepper, thinly sliced
2-3 c. cheddar (or similar) cheese, grated
1/2 pint cherry tomatoes, sliced in half

Steps:

  • Butter a standard (9x13) casserole dish. Combine eggs, milk, cream, herbs and parmesan or romano thoroughly (If you're using whole milk you don't need the cream--just replace it with more milk). Heat a tablespoon or so of oil in a medium skillet. Sauté the sausage over medium-high heat until browned. Remove from pan. Add a little bit more oil and the shallots or scallions and the pepper. Sauté until slightly softened. Combine with sausage. Assemble the strata. Place a layer of bread slices on the bottom of the dish. Tear little bits off extra slices to fill in gaps. Cover with half the sausage/pepper mixture. Pour half the egg mixture over and than sprinkle on half the cheese. Repeat. Top with cherry tomatoes. Cover and refrigerate until needed, at least 20 minutes. Uncover and bake at 350 degrees 45 minutes to 1 hour. Variation Ideas: Mediterranean strata: Use a combination of artichoke hearts, olives, sun-dried tomatoes, feta cheese and other Mediterranean ingredients. Swiss strata: How about onions, mushrooms, spinach and Swiss cheese? Simple strata: Steamed broccoli and tomatoes.
