4 salmon steaks, about 1 inch thick, about 2 to 2 1/2 lbs

Kosher salt and freshly ground black pepper
4 tablespoons (1/2 stick) butter, softened
1 tablespoon fresh tarragon, or 2 teaspoons dried
1 tablespoon red wine vinegar
