1 lb hamburger meat
1 pkg Taco Bell Taco Seasoning Mix (& 3/4 cup water to prepare)
1 pkg Velveeta Shells and Cheese
1/2 cup salsa
Approx. 20 tortilla chips, crushed

Steps:

  • Brown hamburger meat, drain. Add taco seasoning and water. Prepare according to package directions. Meanwhile, prepare the Velveeta Shells and Cheese according to package directions.
  • Preheat oven to 350 degrees F. Spread the taco meat on the bottom of a 2 qt baking dish. Spread the salsa on top of the taco meat. Spread the prepared Velveeta Shells and Cheese on top of the salsa. Top with crushed tortilla chips.
  • Bake for 10 minutes and serve.

1 flour tortilla
2 slices swiss cheese
2 eggs
salsa
black pepper

Steps:

  • Fry eggs to your liking. Sprinkle black pepper to taste.
  • Lay flour tortilla on dinner plate.
  • Place cheese on top of tortilla, covering as much of the tortilla as possible (I tear up the slices to make them fit).
  • Heat about 35-40 seconds in microwave, enough to melt the cheese.
  • Slide cooked eggs on top of the cheese.
  • Spoon your favorite salsa over the eggs and spread to cover.
  • Heat another 15 second in the microwave, unless you like the salsa cold.
  • Eat!

6 medium potatoes (2 lbs)
1/2 cup finely chopped onion
1/3 cup sweet pickle relish
1 1/4 cups mayonnaise, Helman's preferred
2 teaspoons sugar
2 teaspoons celery seeds
2 teaspoons vinegar
2 teaspoons mustard, Maille preferred
1 1/2 teaspoons salt
2 eggs, hard-boiled, coarsely chopped

Steps:

  • In a covered saucepan cook potatoes in boiling, salted water for 25-30 minutes or until tender. Drain well.
  • Peel and cube potatoes and transfer to a large bowl.
  • Add onion and egg.
  • Combine mayo, sugar, celery seed, vinegar, mustard, salt, and relish.
  • Pour over potato mixture and toss to coat. Cover and chill.
