Provided by PaulaG

Categories     Brown Rice

Time 1h10m

Yield 9 serving(s)

Number Of Ingredients 11

2 cups water
1 cup uncooked brown rice
1/2 teaspoon dried basil
2 medium carrots, scrubbed and cut into thin 1 inch strips
1 cup chopped onion
9 green onions, cut into 1 inch strips
1/2 cup raisins
2 tablespoons olive oil
1 (10 ounce) package frozen peas, thawed
1 teaspoon salt
1 cup pecan halves, toasted

Steps:

  • In a medium size saucepan, bring the water to a boil.
  • Add the rice and basil stirring well.
  • Reduce heat to low; cover and simmer for 45 minutes or until rice is tender and the water has been absorbed.
  • In a large non-stick skillet, stir-fry the carrots, onion, and green onions in hot oil for 5-7 minutes or until vegetables are lightly browned.
  • Add peas and salt; cook for 1 minute or until vegetables are tender.
  • Stir in pecans, raisins and rice; heat through.
  • Please note: If serving as a main dish the serving size yield will be less.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all the ingredients and tools you need. This will help you stay organized and prevent any scrambling during the cooking process.
  • Choose the Right Type of Vegetables: You can use any type of vegetables you like in this recipe, but some good options include carrots, celery, onions, bell peppers, and zucchini. You can also add some leafy greens, such as spinach or kale, for extra nutrition.
  • Seasoning is Key: Be generous with the seasonings in this recipe. The brown rice and vegetables can handle a lot of flavor, so don't be afraid to add plenty of herbs, spices, and salt and pepper.
  • Don't Overcook the Vegetables: You want the vegetables to be tender, but not mushy. Cook them just until they are starting to soften, but still have a bit of a bite to them.
  • Use a Good Loaf Pan: A 9x5 inch loaf pan is the perfect size for this recipe. Make sure the pan is well-greased so that the loaf doesn't stick.
  • Let the Loaf Cool Before Slicing: Once the loaf is baked, let it cool for at least 10 minutes before slicing. This will help it hold its shape.

Conclusion:

Brown rice vegetable loaf is a delicious, healthy, and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own taste preferences. Whether you're a vegetarian or meat-eater, this loaf is sure to please everyone at the table. So next time you're looking for a hearty and satisfying meal, give this brown rice vegetable loaf a try.
