Time 4h

Yield About 24 brownies

Number Of Ingredients 18

Cooking spray
24 square shortbread cookies (such as Lorna Doone)
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 stick unsalted butter, at room temperature
1 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup assorted baking chips (such as chocolate, peanut butter and butterscotch)
1/2 cup M&M's
2 sticks unsalted butter
4 ounces semisweet chocolate, chopped
2 cups granulated sugar
4 large eggs
1 2/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt

Steps:

  • Make the shortbread layer: Preheat the oven to 350˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on the two short sides; lightly coat with cooking spray. Arrange the shortbread cookies in a single layer in the prepared pan.
  • Make the cookie-dough layer: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until pale and fluffy, 3 to 5 minutes. Beat in the egg and vanilla until smooth. Reduce the speed to low and beat in the flour mixture until just combined. Stir in the baking chips and M&M's.
  • Make the brownie layer: Melt the butter and chocolate in a medium saucepan over medium heat, stirring occasionally. Let cool slightly. Stir in the granulated sugar and eggs until smooth and glossy. Stir in the flour, cocoa powder and salt until no lumps remain.
  • Spoon about half the brownie batter over the shortbread cookies and spread gently to cover. Flatten handfuls of the cookie dough mixture into small patties and lay on top of the brownie batter in a single layer. Spread the remaining brownie batter on top to cover.
  • Bake until a toothpick inserted into the center of the brownies comes out clean, 55 to 60 minutes. Transfer to a rack and let cool 1 hour in the pan. Carefully remove from the pan using the foil overhang; transfer the brownies to the rack to cool completely. Cut into pieces.

CHOCOLATE BROWNIE MIX IN A JAR

Chocolate Brownie Mix in a Jar image

A lovely gift for a friend - a jar containing the main ingredients for chocolate brownies

Provided by Rachel Ivy

Time 40m

Yield Makes Brownies

Number Of Ingredients 12

1/2 tsp salt
1/2 tsp baking powder
95 g plain flour
35 g cocoa
75 g plain flour
135 g brown sugar
150 g sugar
100 g chocolate chips
100g white chocolate chips
50 g walnuts or pecans (optional)
150g melted butter
3 beaten eggs

Steps:

  • Layer the dry ingredients in a one litre jar, following the order above, from top, starting with the baking powder and flour. Press each layer down before adding the next. The amounts given should exactly fill a one litre jar.
  • Give to your friend :) Remember to include a tag with the following instructions
  • For the tag:
  • Combine the contents of the jar with 150g melted butter and 3 beaten eggs. Mix well, and pour into a lined 9 x 9 inch tin. Bake at Gas 4 / 180 C (160 fan) / 350 F for 25-35 minutes.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the brownies will be. Look for chocolate with a cocoa content of at least 70%.
  • Don't overmix the batter. Overmixing can make the brownies tough. Mix just until the ingredients are combined.
  • Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached. Overbaking will make the brownies dry.
  • Let the brownies cool completely before frosting them. This will help the frosting to set properly.
  • Be creative with your toppings. You can top the brownies with anything from nuts and sprinkles to chocolate chips and caramel sauce.

Conclusion:

Brownies in a jar are a delicious and easy-to-make treat that are perfect for any occasion. They are also a great way to use up leftover brownie batter. With a few simple tips, you can make the perfect brownies in a jar every time. So next time you're in the mood for a sweet treat, give brownies in a jar a try!
