BUSY DAY CAKE

Busy Day Cake image

I got this recipe from the Fanny Farmer Cookbook - years and years ago. It is the first cake I ever learned to make. I believe the first time I made it I was about 10 years old. I also taught my boys how to make this when they were 8 and 10. It's very easy. Tasty enough, but the frosting is what adds the most flavor. I use the store bought frosting on it. Very simple to make and like the title says - it's great for a dessert on a busy day!

1/3 c shortening
3/4 c white sugar
1 egg
1 1/2 tsp vanilla
1 3/4 c self rising flour
3/4 c milk
1/2 c blueberries (optional)
if you do use the berries, add another 1-2 tbsp milk

Steps:

  • 1. Preheat oven to 375 degrees. Place shortening in a mixing bowl and add sugar, egg and vanilla, mix until moistened.
  • 2. Gradually add flour and milk at the same time. If desired, add the extra milk and blueberries as well. Mix until well incorporated.
  • 3. Bake in a greased 9x9x2 baking pan for about 25 minutes.
  • 4. This cake is yummy on its own. We would typically have it with whipped cream and berries.
  • 5. If you do not have self rising flour, you can make your own, just sift together flour with 1 tsp baking powder per 1 cup of flour.

Tips:

  • Use quality ingredients: Fresh, high-quality ingredients will make a big difference in the taste of your cake.
  • Measure accurately: Baking is a science, so it's important to measure your ingredients accurately.
  • Follow the recipe carefully: Don't substitute ingredients or change the instructions unless you know what you're doing.
  • Don't overmix the batter: Overmixing can make the cake tough.
  • Bake the cake until it's done: A toothpick inserted into the center of the cake should come out clean.
  • Let the cake cool completely before frosting it: This will help prevent the frosting from melting.
  • Be creative with your frosting: There are endless possibilities when it comes to frosting your cake. Get creative and have fun!
