Number Of Ingredients 9

2 lb chicken wings
1 teaspoon salt,
1 teaspoon black pepper
1 tablespoon italian seasoning
1 teaspoon ground cumin
⅓ cup grated parmesan cheese
4 cloves garlic, finely minced
¼ cup olive oil
¼ cup fresh parsley, chopped

Steps:

  • Preheat oven to 300ºF (150°C).
  • In a large bowl, mix together the salt, pepper, Italian seasoning, and cumin. Pour chicken wings into the bowl and coat with the spice mixture.
  • Transfer wings on to a baking sheet, bake for 20 minutes. Then increase the oven temperature to 425ºF (220°C) bake for 15 more minutes.
  • While the chicken is baking, mix together the parmesan cheese, garlic, oil, and fresh chopped parsley.
  • When the chicken is cooked through, toss the wings with the garlic/cheese/olive oil mixture. Serve immediately

4 pounds chicken wings
½ cup butter
2 cloves garlic, minced
1 cup grated Parmesan cheese
1 tablespoon dried parsley
1 tablespoon dried oregano
2 teaspoons ground paprika
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a shallow baking dish with aluminum foil and grease lightly.
  • Cut tips from chicken wings and discard. Cut between the joint to separate each wing into 2 pieces.
  • Combine butter and garlic in a small saucepan over low heat; heat until butter is melted and garlic is fragrant, 3 to 5 minutes.
  • Mix Parmesan cheese, parsley, oregano, paprika, salt, and pepper together in a shallow bowl.
  • Dip chicken wing pieces in melted butter mixture; coat with Parmesan cheese mixture in the bowl. Arrange in the prepared baking dish. Drizzle any remaining butter on top.
  • Bake in the preheated oven until skin is browned and juices run clear, about 1 hour.

1/4 cup kosher salt
3 tablespoons granulated sugar
3 tablespoons vinegar
2 pounds chicken wings
1 cup vinegar
1/2 cup sugar
1 tablespoon pickling spice
5 stalks celery, cut into 2-inch pieces and strings removed
1 cup honey
1/4 cup white vinegar
1 tablespoon soy sauce
Juice of 1 lemon
Favorite dipping sauces, for serving

Steps:

  • For the chicken wings and brine: Combine the salt, sugar, vinegar and 5 cups water in a nonreactive container and stir until the salt and sugar are dissolved. Put the chicken wings in the brine and marinate, refrigerated, at least 12 hours.
  • For the pickled celery: Put the vinegar, sugar and pickling spice in a saucepot. Add the celery and bring to a boil over medium heat. Remove from the heat and let the celery cool in the pickling liquid. (You can also store the celery in the pickling liquid.)
  • For the wing glaze: Combine the honey, vinegar, soy sauce and lemon juice in a large bowl and mix thoroughly.
  • Preheat the oven to 375 degrees F.
  • Remove the wings from the brine and discard the brine. Put the wings in a roasting pan and bake until a meat thermometer inserted in the wings registers 165 degrees F, about 25 minutes. Toss the hot wings in the wing glaze to coat.
  • Serve with the pickled celery and your favorite dipping sauces.
