MELTED SNOWMAN PEANUT BUTTER COOKIES

Melted Snowman Peanut Butter Cookies image

Provided by Valerie Bertinelli

Categories     dessert

Time 40m

Yield 12 cookies

Number Of Ingredients 7

About 8 ounces vanilla candy melting wafers
12 round peanut butter cookies (or sugar cookies)
4 marshmallows, cut crosswise into thirds
24 mini chocolate chips
12 orange sprinkles
6 mini peanut butter cups, halved and trimmed to look like brimmed hats
Assorted other sprinkles for decorating, if desired

Steps:

  • Melt the candy melting wafers according to the package directions. Spoon some of the melted candy on top of a cookie and spread it so it covers most of the cookie but has an irregular border. Place a slice of marshmallow toward the top edge and spoon some more melted candy on top, smoothing it to fully cover the marshmallow and blend it into the candy on the cookie.
  • Decorate the face of the snowman with mini chocolate chips for eyes and an orange sprinkle as a carrot nose. Place a peanut butter cup half on top of the snowman's head like a hat. Use other sprinkles to add a mouth or buttons if desired. Repeat with the remaining candy, cookies and decorations (rewarming the candy melts if necessary). Let the cookies set, about 10 minutes.

PEANUT BUTTER SNOWMEN

Categories     dessert

Time 33m

Yield 32 cookies

Number Of Ingredients 9

2 (16-ounce) bags white chocolate chips
2 tablespoons shortening
1 (16-ounce) package peanut butter sandwich cookies (recommended: Nabisco Nutter Butters)
Chocolate sprinkles
Colored sprinkles
Candy buttons (dot candy on paper)
Red nonpareils
Large sugared gum drop jellies
Red string licorice ((recommended: Twizzlers Pull-n-Peel)

Steps:

  • Place white chocolate chips and shortening in a medium microwave-safe bowl. Microwave on high for 1 minute; stir until chips are melted and mixture is smooth. If necessary, microwave on high for additional 30 second intervals until mixture is smooth. If you prefer, place in double boiler over low heat, stirring until completely melted and smooth.
  • Meanwhile, pierce 1 end of each cookie with a toothpick. Use the toothpick to dip entire cookie into the white chocolate mixture. Let excess drip back into bowl and lay cookie on wire rack. Before the white chocolate has a chance to cool, decorate the cookie with various candies into a playful snowman.
  • Place chocolate sprinkles as eyebrows, blue or green dots for eyes, an orange sprinkle placed vertically for the nose and several red nonpareils for a mouth. Cut a gumdrop in half, slice a sliver from each half lengthwise to form a crescent shaped brim to the hat. Top off the hat with a gumdrop half and reserve the other half for another snowman. You may have to flatten the gumdrop a bit to fit the snowman.
  • After the snowman has completely dried, tie a red string licorice around the neck as a scarf. Using a rolling pin to flatten the licorice will make it easier for the scarf to stay tied and look natural.

SUGAR-COOKIE SNOWMEN

Sugar-Cookie Snowmen image

Provided by Tracey Seaman

Categories     Cookies     Dessert     Bake     Christmas     Kid-Friendly     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher     Small Plates

Yield Makes 1 to 2 dozen cookies (depending on size of cookie cutter)

Number Of Ingredients 9

2 sticks (1/2 pound) unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg
2 2/3 cups unbleached all-purpose flour
Royal Icing
Candies for decorating: mini M&Ms, black licorice twists, cherry pull-apart shoestring licorice, red cinnamon candies

Steps:

  • In electric mixer, beat butter and sugar at medium-high speed until fluffy, about 5 minutes. Add vanilla, baking soda, and salt and beat at medium speed until incorporated. Beat in egg. Add flour and mix at low speed until just combined. Divide dough in half, form into 2 disks, and wrap in plastic wrap or waxed paper. Chill until firm, at least 1 hour or up to 2 days.
  • Arrange racks in upper and lower thirds of oven and preheat to 375°F. Line 2 heavy large baking sheets with parchment paper.
  • Remove 1 dough disk from refrigerator. On lightly floured work surface, roll out dough to 1/4-inch thickness. Using 5- to 6-inch snowman cookie cutter, cut out cookies; transfer with spatula to baking sheets. Gather and reroll scraps and cut out additional cookies. Chill cookies 10 minutes.
  • Bake until golden and somewhat firm to touch, about 15 minutes. Cool on pans 5 minutes, then transfer to racks and cool completely. Repeat with remaining dough.
  • To decorate cookies: Transfer royal icing to pastry bag fitted with #3 or #4 plain round tip. (Alternatively, place icing in sturdy plastic bag and snip off tiny hole from one corner.) Pipe outline around edge of cookie, then make dots for eyes, nose, and mouth and place mini M&M on each. Pipe 3 lines across hat area, cut black licorice to fit, and place to make hat. Pipe 3 dots for buttons and place cinnamon candy on each. Pipe horizontally across neck and cut and fit red licorice in place for scarf.
  • Let icing dry completely (about 1 hour, depending on humidity). Wrap cookies individually in cellophane bags tied with ribbon.

Tips:

  • Use cold butter: This will help the cookies hold their shape better.
  • Cream the butter and sugar together until light and fluffy: This will help the cookies be more tender.
  • Chill the dough before baking: This will help the cookies spread less.
  • Bake the cookies at a high temperature for a short amount of time: This will help the cookies be crispy on the outside and soft on the inside.
  • Let the cookies cool completely before decorating: This will help the decorations stay in place.

Conclusion:

These butter cookie snowmen are a fun and festive treat that is perfect for the holiday season. They are easy to make and can be decorated in a variety of ways. You can also have fun with different types of frosting, sprinkles, and candies to make each snowman unique. The cookies are sure to be a hit with kids and adults alike.
