This is a delicious healthy side dish. Pretty enough for company, but kids enjoy the sweet taste! Fresh squash is easy to cook in the microwave, but frozen tastes just as good. For the milk, I used nonfat, my neighbor uses Mocha Mix to make it non-dairy. From my neighbor, Tiffanie, who is the best kosher cook ever!!

Categories     Vegetable     Bake

Number Of Ingredients 6

1 butternut squash, cut into large chunks
1 stick of margarine
1 cup flour
1 cup sugar
3 eggs
¼ cup non-dairy creamer

Steps:

  • Mash the squash and margarine together. Add remaining ingredients to the mashed squash and mix until well blended. Pour mixture into a baking dish and liberally sprinkle cinnamon over the top. Bake for about an hour at 350 degrees F

Tips:

  • Choose the right squash: Look for a butternut squash that is firm and heavy for its size, with a deep orange color. Avoid squash that has any soft spots or blemishes.
  • Roast the squash properly: Roasting the squash brings out its natural sweetness and flavor. Be sure to roast the squash until it is tender and slightly caramelized.
