12 ounces cooked chicken-apple sausage, cut into 1/2-inch pieces
4 cups cubed peeled butternut squash (1 small to medium squash)
3 medium carrots, chopped
1 stalk celery, chopped
1/2 medium onion, chopped
2 1/2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
1/2 cup fresh sage or parsley leaves

Steps:

  • Heat 1 tablespoon olive oil in a large pot over medium-high heat. Add the sausage and cook, stirring occasionally, until browned, about 4 minutes. Transfer to a bowl using a slotted spoon. Add the squash, carrots, celery, onion, chicken broth, 2 1/2 cups water and 3/4 teaspoon salt to the pot. Cover and bring to a simmer, then reduce the heat to low and continue simmering until the vegetables are tender, about 15 more minutes.
  • Puree the soup in a blender in batches, then return to the pot along with the sausage. Season with salt and pepper and keep warm.
  • Heat the remaining 1/3 cup olive oil in a small saucepan over medium-high heat. 13 cups water
5 pounds butternut squash, peeled and cubed (about 10 cups)

1 ½ pounds skinless, boneless chicken thighs, trimmed and cut into 1 1/2-inch pieces
1 large yellow onion, thinly sliced lengthwise
4 cloves garlic, smashed
4 teaspoons finely grated fresh ginger
2 ½ cups water
2 cups peeled and cubed (3/4-inch) butternut squash
1 (14.5 ounce) can diced tomatoes in juice
1 (5 ounce) package baby spinach leaves

1 medium butternut squash, peeled and cut into medium dice
1 medium yellow onion, cut into medium dice
4 chicken thighs, bone-in, skin-on
2 tablespoons olive oil
salt, to taste
ground black pepper, to taste
4 cups low-sodium chicken broth
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1 -2 tablespoon freshly squeezed lemon juice
fresh cilantro, for garnish

Steps:

  • Preheat oven to 425°F Place squash, onion, and chicken on a baking sheet in a single even layer. Drizzle with olive oil, and sprinkle with salt, and pepper. Toss to coat and roast until the chicken is cooked through and squash is tender, about 30 minutes.

2 tablespoons butter
1 cup sliced onions
¾ cup sliced leeks
2 ½ cups peeled, seeded and cubed butternut squash
½ cup dry white wine
5 cups chicken broth
1 pinch ground cinnamon
1 pinch ground ginger
1 pound cheese filled spinach ravioli
¾ cup light cream
salt and pepper to taste

Steps:

1 small carrot, finely chopped
1 green onion, sliced
1/2 teaspoon ground cumin

2 cups vegetable broth, divided

3 ounces cream cheese, cubed
1/4 cup minced fresh basil
