1 cup brown sugar, packed
1 (3 1/2 ounce) package instant butterscotch pudding mix
1/4 cup white sugar
2 teaspoons ground cinnamon
1/2 cup pecans or 1/2 cup walnuts
1/2 cup butter, melted

Steps:

  • The night or several hours before you want to serve, spray a non-stick bundt or tube pan with non-stick spray. Mix brown sugar, pudding mix, white sugar and cinnamon together.
  • Place frozen dough in pan a layer at a time. Sprinkle butterscotch mixture, then nuts and top with some butter. Repeat layers until all ingredients have been used.

1 loaf french bread, cut into 1 inch cubes, about 5 1/3 cups
1 cup whole milk
1/3 cup brown sugar
1/3 cup granulated sugar
1 cup heavy cream
2 eggs
2 egg yolks
1 tsp vanilla extract
1 tsp + 1/2 tsp cinnamon
2 tbsp rum
2 large apples, peeled and cored, cut into thin slices or cubes (whichever you prefer)
BUTTERSCOTCH RUM SAUCE
2/3 cup heavy cream
5 tbsp + 1 tsp butter
1 cup brown sugar, tightly packed
2 tbsp honey
2 tsp vanilla extract
2 tbsp rum

Steps:

  • To make the bread pudding: Lightly toast the bread cubes in the oven or in a small oven toaster until very light brown with a slight crunch, 5 to 10 minutes should do. Remove and set aside. Heat the milk with the brown sugar and granulated sugar in a pan on low heat until completely dissolved. Remove from the heat and let cool for 5 minutes. Transfer this mixture to a bowl and mix in the heavy cream. Whisk in the eggs gradually until well combined. Add the vanilla, 1 tsp cinnamon and rum and mix well. Set aside. In another bowl, sprinkle the 1/2 tsp cinnamon over the apples and mix until well coated. Butter an 8x8 inch square baking dish. Arrange half the amount of bread cubes in a single, even layer. Spread the apples evenly over the bread cubes. Top with the remaining half of bread cubes. Carefully pour the custard mixture evenly over the whole thing. Set aside for 30 minutes at room temperature or overnight in the fridge, covered. Gently press down the bread cubes with the back of a wooden spoon to properly soak all the bread cubes every 10 minutes. Bake at 350 degrees for 45-50 minutes until the pudding is set. Best served warm drizzled with the butterscotch rum sauce. Put everything together, except for the rum, in a saucepan on low heat and boil gently for 10 minutes, stirring once in a while until nice and thick. Remove from the heat and stir in the rum. Drizzle warm pudding slices with the sauce before serving. NOTES: Mine puffed up quite a bit while baking in the oven and sank a little once cooled. Bread puddings are meant to be eaten warm, swimming in thick, rich, caramel sauce spiked with rum. It IS the ONLY WAY to eat bread pudding! Just drizzle the sauce on a slice and pop them in the microwave for 30 seconds or so on high. The pudding becomes more moist, softer and SO delicious! This one is a REAL KEEPER.

1/2 cup light corn syrup
3 tablespoons unsalted butter
1 1/2 teaspoons kosher salt
1/2 cup heavy cream

Pudding:
1 pound day-old rustic white bread, crusts removed, cut into 1/2" cubes (12 cups)
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons plus 1 1/2 cups sugar
5 large eggs
4 cups heavy cream
1 1/2 tablespoons poppy seeds
Pinch of kosher salt
3 tablespoons bourbon
1/2 vanilla bean, split lengthwise
2 cups pecan pieces

  • For butterscotch sauce:
  • Bring brown sugar, corn syrup, butter, and salt to a boil in a medium saucepan over medium-high heat, whisking to dissolve sugar. 1 1/2 lbs large apples (or more)
8 eggs
5 cups half-and-half
1 1/4 cups dark brown sugar, packed

  • CRUMBLE THE BREAD into coarse crumbs, using your hands.

I started with 1 serving of her recipe and worked off of that and made it 2 servings. I think this would be good with bananas tossed in orange juice mixed in it too! There are more ways to make it even lighter which I have offered below. You could also omit the sauce. ***Nutrition facts for Splenda brown sugar blend: 1/2 tsp= 10 calories and 2g sugars. So if you use all of it in this recipe that should bring the calories up to 386 per serving and the sugar to 20.5g per serving.

BREAD PUDDING:
7 c chopped potato bread
2/3 c chopped macadamia nuts
1/2 c shredded coconut
1/2 c butterscotch chips
4 eggs
1 (12 oz.) can evaporated milk
1 (14 oz.) can sweetened condensed milk
2 Tbsp light brown sugar
1 tsp vanilla extract
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1/4 tsp salt
2 Tbsp butter, cut into small pieces
SALTED BUTTERSCOTCH SAUCE
1/2 c butter
1/2 c light brown sugar
1/4 c light corn syrup
1/2 c heavy cream
1/4 tsp kosher salt
CARAMELIZED BANANAS:
3 Tbsp butter, divided (as needed)
3 Tbsp light brown sugar, divided (as needed)
4 bananas (not too ripe), peeled, sliced
1 vanilla ice cream, if desired

Steps:

  • 1. To make bread pudding: Preheat oven to 350 F. Spray a 13x9 pan with nonstick cooking spray. Set aside. In a large bowl, toss together bread, nuts, coconut, and butter scotch chips. Spread on pan. In a medium bowl, whisk together eggs, evaporated milk, condensed milk, light brown sugar, vanilla extract, nutmeg, cinnamon, and salt. Pour over bread mixture in baking dish, making sure bread is completely soaked in egg mixture. Cover; let sit 30 minutes. Dot with small pieces of butter. Bake, uncovered, 45-55 minutes or until top is crisp and golden brown.
  • 2. To make butterscotch sauce: In a medium saucepan, over medium heat, melt butter. Stir in light brown sugar, and corn syrup. Bring to a simmer. Cook, stirring, until thick, syrupy and golden in color, about 10 minutes. Remove from heat; stir in cream and kosher salt. Cover to keep warm.
  • 3. To make caramelized bananas: In a large, nonstick skillet, over medium high heat, melt 2 tablespoons butter and 2 tablespoons light brown sugar. Once butter-sugar mixture becomes bubbly, add bananas. Cook, flipping once, about 2-3 minutes per side, or until caramelized on both sides. Remove to a plate. (May need to work in batches to avoid overcrowding bananas. If so, add 1 tablespoon butter and 1 tablespoon light brown sugar to skillet before adding second batch of bananas.)
  • 4. To serve, top bread pudding with bananas and spoon butterscotch sauce over top. Serve immediately. If desired (to make this an even more decadent dessert), serve with vanilla ice cream.

3/4 pound brioche or challah
1 cup walnuts
1 cup butterscotch chips
2 cups milk
2 tablespoons instant espresso or coffee granules
3 large eggs
3/4 cup sugar
1/4 teaspoon salt
2 tablespoons unsalted butter

Steps:

  • Discard crust from bread and cut enough bread into 1/2-inch cubes to measure 6 cups. In a large baking pan dry bread, uncovered, at room temperature 12 hours. (Alternatively, dry bread in a 250°F oven 1 hour.)
  • Butter a 10-inch pie plate (1 1/2 quarts).
  • Chop walnuts and toast golden. Cool walnuts. In a bowl toss together bread, half of walnuts, and butterscotch chips and transfer to pie plate. In a saucepan heat 1 cup milk until it just begins to boil and remove pan from heat. Add espresso or coffee granules, stirring until dissolved, and stir in remaining cup milk.
  • In bowl whisk together eggs, sugar, and salt and whisk in espresso mixture until combined well. Pour custard slowly and evenly over bread mixture. Chill pudding, covered, at least 1 hour and up to 1 day.
  • Preheat oven to 350°F.
  • Sprinkle remaining walnuts evenly over pudding. Cut butter into bits and dot pudding with it. Bake pudding in middle of oven until bubbling and golden, about 40 minutes. Serve pudding warm or at room temperature.

3/4 cup brown sugar
1/2 cup butter
2 eggs
1 egg yolk
3 cups whole milk
1 cup whipping cream
2 teaspoons vanilla
1 teaspoon ground nutmeg
8 cups bread (cubed, Italian works well, you want a dense bread)
3 ripe bartlett pears, peeled and cubed
1 tablespoon melted butter
1 tablespoon sugar
1/4 cup butter
2/3 cup brown sugar
1 tablespoon water
1/3 cup light corn syrup
3 tablespoons whipping cream

Steps:

  • Cook brown sugar and butter over medium heat, stirring constantly for 2-3 minuets until smooth. Remove from heat.
  • In a bowl, whisk eggs, yolk, milk, cream, vanilla and nutmeg. Whisk in brown sugar until smooth.
  • Add 6 cups of the bread, press down and let stand for 30 minuets.
  • Heat oven to 325. Butter 3 qt baking dish.
  • Pour half of the bread mixture into dish. Arrange pears over mixture and pour the remaining bread mixture over pears.
  • Top with remaining 2 cups of bread, pressing down to slightly moisten.
  • Brush bread cubes with melted butter and sprinkle with sugar.
  • Bake for 1 hour to 1 hour 10 minutes or until top is golden brown and center is set.
  • Cool for 30 minuets while making sauce:.
  • Melt butter in a pot over medium heat.
  • Add brown sugar, water and corn syrup, bring to a boil. Boil for 2 minutes whisking occasionally.
  • Remove from heat, whisk in cream.
  • Serve warm over bread pudding.

125 g butter
10 slices bread
4 eggs
1/4 cup caster sugar
2 cups milk
1 teaspoon vanilla essence
1/2 cup chocolate chips
cinnamon sugar

125 g butter

  • Butter a 10x20cm loaf dish and set aside.
  • Butter bread slices and remove crusts, cut to required shape to fit you pan.
