Low-Fat Butterscotch Oatmeal Pecan Cookies image

Wow these are good for being low-fat! Sometimes to make them even healthier, I replace half the flour with whole wheat flour, and I use 1/4 cup honey to replace half of the light corn syrup. These do not spread out at all. They are wonderful things to pop in your mouth when you want something sweet. This is a variation from Tribole's "Healthy Desserts"

  • Use room temperature butter for easier creaming and a more consistent cookie dough.
  • Cream the butter and sugars together until light and fluffy for a more tender cookie.
  • Add the eggs one at a time, beating well after each addition.
  • Gradually add the flour mixture to the wet ingredients, mixing until just combined. Overmixing can result in tough cookies.
  • Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies in a preheated oven for the specified amount of time. Overbaking can result in dry, crumbly cookies.
  • Let the cookies cool on a wire rack before enjoying. This will help them to firm up and set.
