Number Of Ingredients 7

1 small cabbage, minced
2 medium eggplants, cubed
2 large red peppers, sliced into little strips
4 tablespoons extra virgin olive oil
1 large sweet onion, sliced garlic,
salt and pepper
bean sprouts (optional)

Steps:

  • 1. Heat the extra-virgin olive oil in a large deep skillet on medium heat. 2. Add onions, peppers and sauté until soft. 3. Add eggplant and cook on medium for 5 minutes. 4. Add the chopped cabbage gradually. The cabbage will cook down and open space up for more. 5. Add seasoning to taste and stir until all cabbage is cooked down, After about 20-25 minutes the mixture should be soft.

Tips:

  • Choose the right cabbage: For stir-fries, use a firm, compact head of cabbage like green or Napa cabbage. For slaws, red or savoy cabbage works well.
  • Slice cabbage thinly: This will help it cook evenly and quickly.
  • Don't overcrowd the pan: When stir-frying cabbage, it's important to give it enough space to cook properly. Otherwise, it will steam instead of fry.
  • Use a hot pan: This will help create a nice sear on the cabbage and prevent it from sticking.
  • Season to taste: Cabbage is a versatile vegetable that can be seasoned with a variety of flavors. Try adding garlic, ginger, soy sauce, or vinegar.
  • Serve immediately: Cabbage is best served fresh and hot. If you're making a slaw, chill it for at least 30 minutes before serving.

Conclusion:

Cabbage is a healthy and versatile vegetable that can be used in a variety of dishes. With its mild flavor and crunchy texture, cabbage is a great addition to salads, stir-fries, slaws, and soups.
