8 ounces salmon
1 -2 tablespoon seafood cajun seasoning (recipe follows)
1 tablespoon butter
1 ciabatta roll
2 -3 leaves green leaf lettuce
1/2 tomatoes, sliced thin
1/2 red onion, sliced thin
1 teaspoon cayenne pepper
1/2 tablespoon kosher salt
2 teaspoons paprika
1 teaspoon fresh ground black pepper
2 teaspoons granulated garlic
1 teaspoon onion powder
1 teaspoon gumbo file
1 teaspoon Old Bay Seasoning
3 ounces goat cheese
4 ounces mayonnaise (about 1/2 cup)
1 1/2 tablespoons fresh lemon juice
3 sprigs parsley
salt
fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season the salmon with Seafood Cajun Seasoning.
  • In a medium saute pan, saute salmon in butter on medium-high heat, fat side down, until golden brown. Using a metal spatula turn salmon over and cook until golden brown. Transfer salmon onto a small sheet tray and place in oven for 4 to 6 minutes. Remove from oven and let rest.
  • Slice ciabatta roll lengthwise and place under broiler until lightly golden. Spread Goat Cheese and Lemon Mayonnaise on roll. Arrange salmon, lettuce, tomatoes and onions on roll. Enjoy!

1/2 Vidalia onion, diced
2 eggs
1/2 cup panko bread crumbs
1/2 teaspoon cracked black pepper
1 teaspoon kosher salt
1 lemon, zested
4 tablespoons Dill Mayonnaise, recipe follows
2 (6 1/2-ounce) cans Alaska skinless and boneless pink salmon, drained well
2 tablespoons grapeseed oil
Hamburger buns
1/2 cup mayonnaise
1/2 lemon, juiced
2 tablespoons freshly chopped dill leaves
Pinch cayenne pepper
1/2 teaspoon salt
1/2 teaspoon cracked black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In medium bowl, combine, parsley, onions, eggs, panko, black pepper, salt, lemon zest and Dill Mayonnaise. Add drained salmon and mix well. Form salmon mixture into 4 patties and set aside.
  • Heat 2 tablespoons of grapeseed oil in a large skillet over medium heat. Add the burgers and cook until browned on the bottom. Turn and brown other side. Place in oven for 3 to 4 minutes.

12 1/2-inch-thick egg bread slices
Fresh arugula or watercress leaves
12 thin lemon slices

½ cup herbed goat cheese
¼ cup prepared Dijon mustard mayonnaise blend

Steps:

1 lb steak (top sirloin or flank are my favs)
1 onion, sliced about 1/2 inch thick (yellow or red)
1 teaspoon olive oil
1/2 teaspoon salt and pepper, to taste
4 ounces cream cheese (can use low fat, whipped or brick)
2 teaspoons cajun seasoning
4 flour tortillas or 4 small focaccia bread
4 large lettuce leaves (whatever kind you like, shredded or left whole)

Steps:

  • Preheat the broiler or grill to high.
  • Place the steak on the broiler pan.
  • Brush the steak and onion slices with olive oil and season with salt and pepper and cajun seasoning.
  • Cook the steak 4 min per side for med-rare (6 min per side for med). Add onion when you flip the steak and cook for 2 - 3 min on each side for remainder of steak cooking time. Flip onion slices with a spatula to keep the rings together.
  • Remove onion to a plate and steak to a cutting board when done.
  • While the steak is resting, combine the cream cheese and Cajun seasoning in a small bowl. Taste and adjust the season to your liking.
  • Spread the cream cheese mixture on the four tortillas/halved focaccia
  • Add the lettuce to each sandwich.
  • Slice the steak on the bias (against the grain).

1 1/2 ounces smoked salmon (more if desired)
1/2 ounce goat cheese (about 2 tablespoons)
1 to 2 tablespoons plain yogurt
Several cucumber slices (about 1 1/2 ounces)
A squeeze of lemon
Salt
freshly ground pepper
Chopped chives or dill
2 slices whole-grain sandwich bread, rye bread or a heartier whole-grain country bread

Steps:

  • In a bowl, mash the goat cheese with a fork. Add the yogurt, and mix together until smooth. Spread half on one slice of bread, and top with the smoked salmon. Slice the cucumbers very thin, and layer them over the salmon. If desired, season the cucumbers with a little salt and pepper, and squeeze on some lemon juice.
