4 cups chopped peeled tart apples (about 4 medium)

BREAD PUDDING:
6 large eggs
2-1/2 cups 2% milk
1-1/2 cups plus 2 tablespoons sugar, divided
1 cup heavy whipping cream
1-1/2 teaspoons vanilla extract
Dash ground nutmeg
1 loaf (1 pound) French bread, cut into 1-inch cubes
CARAMEL SAUCE:
1 cup sugar
1/4 cup water
1 cup heavy whipping cream
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add apples, sugar, raisins, walnuts and cinnamon; bring just to a boil, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring occasionally. Remove from heat; stir in vanilla., For bread pudding, in a large bowl, whisk eggs, milk, 1-1/2 cups sugar, cream, vanilla and nutmeg until blended. Stir in bread cubes and apple mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining sugar. Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean., For caramel sauce, in a small heavy saucepan, combine sugar and water; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium-high heat. 3/4 cup pecans, chopped and toasted
1 loaf challah bread, cut or torn into 1-inch pieces (preferably stale)
Caramel Dessert Sauce, recipe follows
Vanilla ice cream, for serving
3/4 cup sugar
1/2 cup (1 stick) unsalted butter
1/2 cup buttermilk
1 tablespoon light corn syrup
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with cooking spray or butter.
  • In a large mixing bowl, whisk together the heavy cream, whole milk, brown sugar, cinnamon, salt, vanilla and egg yolks and set aside.

6 apples (Golden Delicious, McIntosh or Winesap apples, about 2 1/2 inches in diameter, peeled, halved and cor)
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/2 cup brown sugar, packed, divided
1/2 cup dried cherries or 1/2 cup dried currant
4 cups brioche bread (cut or torn into 1 to 2 inch pieces) or 4 cups stale croissants (cut or torn into 1 to 2 inch pieces)
2 eggs, at room temperature
2 egg yolks, at room temperature
2 cups milk, room temperature
1 teaspoon vanilla
1/8 teaspoon ground nutmeg

Steps:

  • Place the baking rack in the center of the oven and heat to 350 degrees F.
  • Butter a shallow 1 1/2-quart baking dish (11 by 7 by 1 1/2 inches), or spray generously with cooking spray.
  • Cut the apples into 1/2-inch-thick slices. In a large bowl, mix together apples, lemon juice and cinnamon. Set aside.

  • Heat oven to 325 degrees. Place apples in a small bowl, and toss with lemon juice; set aside. Butter six 8-ounce ramekins or custard cups; place in a roasting pan. Cut brioche into 8 slices, then quarter each slice; set brioche aside.
  • In a large bowl, whisk together cream, eggs, sugar, salt, vanilla, and nutmeg. Add brioche, and toss to coat.

1/2 cup milk
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Line 9-inch square or round pan with foil; spray bottom and sides with cooking spray.
  • Open cinnamon rolls per instructions on cans. Cut each roll into 9 pieces. Arrange half of cut rolls in single layer in bottom of prepared pan. In medium bowl, whisk eggs, milk, vanilla, cinnamon and salt.

  • To make apple topping: Peel and core apples and cut into 1-inch chunks. Melt butter in a small saute pan and add apples and sugar. Cook over medium-high heat until apples turn brown on all sides, 3 to 5 minutes. Place apples in the bottom of the caramel-lined mold, distributing evenly so they reach up the sides.
  • Choose a pot large enough to hold the pudding mold with a 2-inch space all around. Place a wire rack or a folded kitchen towel in the bottom of pot; fill with enough water to reach halfway up sides of mold. Cover pot, and bring to a boil. Reduce heat to a simmer.
  • To make pudding: In the bowl of an electric mixer, cream together butter and brown sugar. Add the eggs and molasses; mix well. Add the reserve applesauce, and mix well.
  • In a large bowl, sift together flour, baking powder, and salt; stir in breadcrumbs. Add to the applesauce mixture. Stir batter until just combined.
  • Fill pudding mold with batter; clamp on lid. Place mold in a pot of simmering water. Cover pot, and cook until a toothpick inserted into middle of pudding comes out clean, about 1 hour 40 minutes. Check water often, keeping it at a steady, low simmer. Transfer mold to a wire rack to cool, 15 minutes.
  • When ready to serve, invert the pudding onto a serving plate. If any of the apple chunks stick to the mold, remove them, and rearrange them on the top; slice.

1 cup plus 2 tablespoons packed brown sugar, divided
1/2 cup butter, cubed
2 tablespoons light corn syrup
3/4 teaspoon ground cinnamon
4 cups sliced peeled Granny Smith apples (about 4 medium)
4 large eggs
1 cup 2% milk
1 teaspoon vanilla extract
1/2 teaspoon salt
1 loaf (1 pound) egg bread, cut into 1-1/2-inch cubes

Steps:

  • In a small saucepan, combine 1 cup brown sugar, butter, corn syrup and cinnamon; cook and stir 4-6 minutes over medium heat until blended. Pour into a greased 13x9-in. baking dish; top evenly with apples. Cool slightly., In a large bowl, whisk eggs, milk, vanilla, salt and remaining brown sugar until blended; stir in bread. Pour over apples. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Remove bread pudding from refrigerator; uncover and let stand while oven heats. Bake 35-40 minutes or until bubbly and top is golden. Serve warm.

2 cups peeled cored and sliced granny smith apples
1/4 cup water
3/4 teaspoon ground cinnamon
1/2 cup packed brown sugar
2 tablespoons light corn syrup
2 tablespoons butter or 2 tablespoons margarine
1/4 cup pecan pieces
3 eggs, beaten
1 1/4 cups milk
1 teaspoon vanilla
1/4 teaspoon ground nutmeg
8 -10 slices Italian bread (1/2 inch thick) or 8 -10 slices French bread (1/2 inch thick)

Steps:

  • In a saucepan, add apples and water; bring mixture to boiling; lower heat.
  • Cover and cook over medium-low for 5-7 minutes or until apples are tender; stirring frequently.
  • Drain apples and transfer to a small bowl.
  • Stir in cinnamon and set apples aside.
  • In the same saucepan, add brown sugar, corn syrup, and butter.
  • Cook and stir over medium heat until just reaches boiling.
  • Remove from heat.
  • Pour mixture into an ungreased 2-quart square baking dish.
  • Sprinkle evenly with pecans.
  • In another bowl, add eggs, milk, vanilla, and nutmeg; mix well.
  • Place half of the bread slices on top of the caramel, trimming bread to fit.
  • Spoon apples evenly over the bread slices.
  • Place remaining bread slices over apples.
  • Pour egg mixture evenly over bread slices; press bread down gently to moisten completely.
  • Cover and chill if refrigerator for 3 to 24 hours.
  • In a 325°F oven, bake, uncovered, for 40-45 minutes or until knife comes out clean.
  • Run a knife around the edges to loosen.
  • Cool in pan on a wire rack for 15 minutes.
  • Carefully invert pudding onto a platter (Spoon any remaining caramel mixture in dish over pudding).
  • Cut and serve warm.

I have insomnia off and on and one night when I was up till the wee hours I figured I would just get some of my cookbooks out and see what I could find to make and I came across a caramel apple bread pudding recipe that sounded so good and I just happened to have all the ingredients so I went to work and this was the end result...

6 c stale white or wheat bread cut or torn into small pieces ( i use a mix of both)
3 c any kind of apple peeled and diced small
5 whole eggs, beaten
3 c half and half
1 c splenda brown sugar blend
1/4 tsp salt
2 tsp vanilla extract
2 tsp apple pie spice
1 stick butter, cold
1 can(s) sweetened condensed milk
1 bag kraft caramels, unwrapped

Steps:

  • 1. Preheat oven to 350. Lightly grease or spray a 9×13? baking dish with shortening or non-stick cooking spray.
  • 2. In a large bowl, toss together the bread cubes and the apple pieces. Transfer to the baking dish. In the same large bowl, whisk together the remaining ingredients except for the butter. When combined, continue to whisk while pouring over the bread/apple mixture (just to make sure the spices are evently distributed). Gently combine the bread and egg mixture, making sure each piece of bread is soaking in part of the egg and milk mixture. Allow to stand for at least 15 minutes (longer, if you can; you could even do this the night before, cover it tightly, and then bake it in the morning).
  • 3. Place the condensed milk into a microwaveable dish and put in half the caramels and microwave for 1 minute, then stir. Keep microwaving in 30 second intervals until all caramels are melted and blended smoothly with the condensed milk, make sure you add the whole bag of caramels to the milk. This process should take about 3 minutes.
  • 4. When the egg/milk mixture has mostly soaked into the bread, dab the butter over the bread and drizzle half the caramel mixture over the top, place the baking dish in the preheated oven and bake for 40-50 minutes or until the center is set but not dry. It will have a slight jiggle to it. Remove from oven and allow to stand for 5 minutes.
  • 5. Just before ready to serve, warm the caramel up again to thin it, about 18 seconds, and drizzle on top of each serving. Serve with vanilla ice cream to make a delicious desert! Enjoy.
