1 loaf stale French bread
2 cups milk
1 cup heavy cream
1/2 cup irish cream
2 tablespoons unsalted butter, softened
3 eggs
1 1/4 cups granulated sugar

1/4 cup water
1 cup granulated sugar
1/3 cup freshly brewed coffee
1/3 cup heavy cream
1 teaspoon lemon juice

Steps:

  • Pudding: Crumble the bread, with the crust, into a bowl. Cover with combined milk, cream and liqueur and let stand an hour or until the bread has absorbed most of the liquid.
  • Preheat oven to 325 degrees F. Butter a 13 x 9-inch baking dish and set aside.

Caramel Sauce, for drizzling, recipe follows

1 package (36 cookies) chocolate sandwich cookies, such as Oreos
1 stick (1/2 cup) butter, melted
1 cup packed dark brown sugar
1/2 cup (1 stick) unsalted butter, cut into pats
1/2 cup heavy whipping cream
Pinch kosher salt

Steps:

  • Spoon two large scoops of ice cream into each of four dessert bowls. Divide the chopped peanuts between the bowls; then sprinkle each with some cookie crumbs, drizzle with some caramel sauce, and top with a dollop of whipped cream. Serve.

6 large eggs, separated
1/3 cup sugar
1/3 cup (packed) golden brown sugar
2/3 cup canned solid pack pumpkin
1/8 teaspoon salt
Powdered sugar
Filling
2 tablespoons dark rum
1 teaspoon unflavored gelatin
1 cup chilled whipping cream
3 tablespoons powdered sugar
10 tablespoons plus 1/2 cup English toffee pieces (or chopped English toffee candy; about 7 ounces)
Additional powdered sugar
1 1/2 purchased caramel sauce, warmed

Steps:

  • For Cake:
  • Preheat oven to 375°F. Spray 15x10x1-inch baking sheet with vegetable oil spray. Sift flour, cinnamon, ginger and allspice into small bowl. Using electric mixer, beat egg yolks, 1/3 cup sugar and 1/3 cup brown sugar in large bowl until very thick, about 3 minutes. On low speed, beat in pumpkin, then dry ingredients. Using clean dry beaters, beat egg whites and salt in another large bowl until stiff but not dry. Fold egg whites into batter in 3 additions. Transfer to prepared pan. Bake cake until tester is inserted comes out clean, about 15 minutes.
  • Place smooth (not terry cloth) kitchen towel on work surface; dust generously with powdered sugar. Cut around pan sides to loosen cake. Turn cake out onto kitchen towel. Fold towel over 1 long side of cake. Starting at 1 long side, roll up cake in towel. Arrange cake seam side down and cool completely, about 1 hour.
  • For Filling:
  • Pour 2 tablespoons rum into heavy small saucepan; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes. Stir over low heat just until gelatin dissolves. Beat chilled whipping cream and 3 tablespoons powdered sugar in large bowl until firm peaks form. Beat in gelatin mixture. Fold in 6 tablespoons English toffee pieces.
  • Unroll cake; sprinkle with 4 tablespoons English toffee pieces. Spread filling over. Starting at 1 long side and using kitchen towel as aid, roll up cake to enclose filling. Place cake seam side down on platter. (Can be prepared 1 day ahead. Cover with foil and refrigerate.)
  • Trim ends of cake on slight diagonal. Dust cake with powdered sugar. Spoon some of warm sauce over top of cake. Sprinkle with 1/2 cup toffee. To serve, cut cake crosswise into 1-inch-thick slices. Pass remaining sauce.

1 navel orange

  • On a lightly floured surface roll out the puff pastry 1/8 inch thick and cut out as many 6-inch squares as desired, reserving any remaining dough, covered and chilled, for another use. (Extra squares, baked, keep in an airtight container at room temperature for several days). Transfer the squares to an ungreased baking sheet, bake them in the upper third of a preheated 425°F. oven for 12 to 15 minutes, or until they are crisp and golden, and let them cool on a rack.
  • While the pastry is baking, remove the zest from half of the orange with a vegetable peeler and chop it. With a serrated knife cut away the remaining zest and the pith from the orange, discarding them, and cut the sections free from the membranes, discarding the membranes. In a heavy skillet cook the sugar over moderate heat, undisturbed, until it begins to melt and continue cooking the sugar, swirling the skillet, until it is a golden caramel. Remove the skillet from the heat and add the water carefully with the chopped zest. Simmer the sugar mixture, stirring, until the caramel is dissolved, add the Grand Marnier, and boil the mixture until it is reduced to about 1/4 cup. Strain the sauce into a bowl and let it cool until it is warm.
  • Put a pastry square on each of 2-dessert plates, top each pastry with a scoop of the ice cream and some of the orange sections, and drizzle each serving with some of the sauce.

  • 1. In the bowl of a stand mixer fitted with the whisk attachment, whip the cream to soft peaks.
  • 2. Whisk the Pastry Cream until smooth. Gently fold in the orange zest and whipped cream. Transfer the cream to a pastry bag fitted with a medium, plain tip and refrigerate until ready to serve.
  • Caramel Butter Sauce

  • Candied Pecans
  • 1. Preheat the oven to 350°F (177°C). Place the pecans in a medium bowl and set aside.
  • 2. In a small saucepan, combine the water and sugar and bring to a boil over medium-high heat, stirring, just until the sugar has dissolved. Pour the syrup over the pecans and toss until combined. Spread the coated pecans on a half-sheet pan and bake for about 8 minutes, tossing once during baking, until browned and fragrant.
  • Puff Pastry Rounds
  • 1. Preheat the oven to 400°F (204°C). Line a half-sheet pan with a silicone baking mat.
  • 2. On a lightly floured work surface, roll the puff pastry out to a thickness of 1/2 inch. Using a 3-inch round pastry cutter, cut out 10 rounds from the dough. Arrange the rounds on the prepared sheet pan and top with another silicone baking mat and half-sheet pan; this will allow the rounds to rise evenly. Scoop out any undercooked dough from the center of each half and pipe a generous amount of cold Orange-Scented Pastry Cream on the bottom half of the puff. Replace the top of the puff. Place the dessert on a plate and spoon some Caramel Butter Sauce on top of the warm pastry. Garnish with some Candied Pecans.

1 cup whipping cream

1 teaspoon pumpkin pie spice
1 cup canned pumpkin
1/2 cup packed brown sugar
1 tablespoon cornstarch
stir in 1/3 cup half-and-half or light cream
1/4 cup water
2 tablespoons pure maple syrup
1 tablespoon butter
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 400 degrees. Line a large baking sheet with parchment paper; set aside.
  • To make the Cream Puffs: In a medium saucepan combine water, butter, sugar, and salt. Bring to boiling over medium heat. Add flour all at once, stirring vigorously with a wooden spoon. Cook and stir until mixture forms a ball and pulls away from the side of the pan. Remove from heat; cool for 10 minutes. Add eggs one at a time beating well with a wooden spoon after each addition.

Yield 1-1/2 quarts ice cream and 1-1/4 cups sauce.

3 large egg yolks
3/4 cup packed brown sugar
2 cups heavy whipping cream
1-1/2 cups half-and-half cream
1 cup canned pumpkin
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1/2 teaspoon salt
SALTED CARAMEL SAUCE:
1 cup sugar
1 cup heavy whipping cream
3 tablespoons butter, cubed
1-1/2 teaspoons salt
1 teaspoon almond extract

Steps:

  • In a large heavy saucepan, whisk egg yolks and brown sugar until blended; stir in heavy cream. Cook over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in half-and-half, pumpkin, pie spice, vanilla and salt. Press plastic wrap onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze until firm, 2-4 hours. , For caramel sauce, in a large heavy saucepan, spread sugar; cook, without stirring, over medium-low heat until it begins to melt. Gently drag melted sugar to center of pan so sugar melts evenly. Cook, without stirring, until melted sugar turns a medium-dark amber, 5-10 minutes. Immediately remove from heat, then slowly stir in cream, butter, salt and almond extract. Serve with ice cream. Refrigerate leftover sauce; keep leftover ice cream frozen.

1 ready made 9-inch graham cracker pie shell
1 pound can pumpkin puree
3/4 cup sugar
2 teaspoons 5-spice powder
Pinch of salt
1 (12-ounce) can evaporated milk
1 quart highest quality vanilla ice cream, like Haagen Daz
1 cup sugar
1/4 cup water
1 cup heavy cream

Steps:

  • Preheat oven to 425 degrees. In a large mixing bowl, slowly whisk together everything. Pour into shell and bake for 12 to 15 minutes then turn the oven down to 350 degrees and bake an additional 45 to 50 minutes or until a tester comes cleanly out of the middle of the pie. Cool on a rack. At the same time, melt sugar and water on a low flame until brown. Whisk in the cream, be careful, will boil and set aside. Zig-zag the caramel sauce on a plate and top with slice of pie and scoop of ice cream.
  • PLATING All dishes served family style.

3 CUPs heavy whipping cream
6 TBSPs (3/4 stick) unsalted butter
3 TBSPs honey
3 vanilla beans, halved lengthwise
3 TBSPs bourbon
10 large bananas, unpeeled
2 QUARTs vanilla ice cream
chopped toasted pecans

Steps:

  • Combine brown sugar, cream, butter, and honey in heavy large saucepan. Scrape in vanilla seeds; add beans. Stir mixture over medium heat until sugar dissolves. Increase heat and bring to boil. Reduce heat to medium-low and boil gently until sauce coats spoon thickly and is reduced to 3 2/3 cups, stirring occasionally, about 25 minutes. Mix in bourbon. Prepare barbecue (medium-high heat). Cut unpeeled bananas in half lengthwise. Arrange, cut side up, on baking sheet. Brush cut sides with caramel sauce. Place bananas, still cut side up, on grill rack. Close barbecue; grill until peels are slightly charred and fruit is tender and beginning to come away from peel, about 4 minutes. Place 1 banana half, cut side up, on each plate. Top each with ice cream, warm caramel sauce, and pecans.

COCONUT CREAM CARAMEL SAUCE (NON-DAIRY)

This is a caramel sauce recipe that I came up with today. I can't eat dairy but I miss caramel topped desserts. I love coconut cream made in to a whipped cream, so I thought I'd try in in a caramel sauce~ it worked, the sauce is delicious!

2 Tbsp earth balance buttery spread or stick (non-dairy)
1/2 c brown sugar
1/2 c white sugar
14 oz can of full fat coconut cream (i usually use trader joe's)
1 tsp vanilla extract

Steps:

  • 1. Melt Earth Balance in a small sauce pan.
  • 2. Add brown and white sugars to the pan; stir until smooth.
  • 3. Add the can of coconut cream and the vanilla stir until smooth.
  • 4. Simmer 10 to 15 minutes, the longer you simmer the thicker it will become.
  • 5. Cool completely on the stove, about an hour. Pour in to canning jars or container of your choice and refrigerate. When ready to use: Stir well and eat... with anything! :) Apples, bananas, pretzels, brownies, non-dairy ice cream...
  • 6. Peanut butter filled pretzels, covered in chocolate and drizzled with coconut cream caramel. YUM!!!

For choux pastry
6 tablespoons unsalted butter
3/4 cup water
1/4 teaspoon salt
3/4 cup all-purpose flour
3 large eggs
For caramel sauce
1 cup sugar
1/2 cup water
1/8 teaspoon salt
1/2 stick unsalted butter, cut into 4 pieces
2 tablespoons bourbon or dark rum
For peaches-and-cream filling
1 pound firm-ripe peaches or nectarines
2 tablespoons sugar, divided
1 1/4 cups chilled heavy cream
1 teaspoon bourbon or dark rum
Equipment: a large pastry bag fitted with a 3/4-inch plain tip

Steps:

  • Make choux pastry:
  • Preheat oven to 425°F with rack in upper third. Butter a large baking sheet.
  • Bring butter, water, and salt to a boil in a small heavy saucepan over high heat, stirring until butter is melted. Reduce heat to medium. Add flour all at once and cook, beating with a wooden spoon, until mixture pulls away from side of pan and forms a ball, about 30 seconds. Transfer mixture to a large bowl and cool slightly, about 5 minutes. Add eggs 1 at a time, beating well with an electric mixer at high speed after each addition.
  • Transfer mixture to pastry bag and pipe 8 (5-inch-long) strips (about 1 inch wide) onto baking sheet, spacing them at least 1 inch apart.
  • Bake éclairs 15 minutes, then reduce temperature to 400°F and continue to bake until golden, puffed, and crisp, about 15 minutes more (leave oven on). Immediately pierce side of each éclair with tip of a paring knife and return to oven to dry, propping door slightly ajar, 5 minutes. Halve an éclair horizontally: If still moist inside, return éclairs to oven and dry 5 minutes more. Cool éclairs completely on a rack, about 25 minutes.
  • Make caramel sauce while éclairs cool:
  • Heat sugar in a 10-inch heavy skillet over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt, then stop stirring and cook, swirling skillet occasionally so sugar melts evenly, until it is a dark amber. Remove from heat and immediately spoon about 1 teaspoon of caramel along top of each éclair, spreading it with back of spoon. Add water and salt to remaining caramel in skillet and simmer, stirring occasionally, until all of caramel is dissolved. Add butter and bourbon, swirling skillet to incorporate. Remove from heat and keep sauce warm, covered.
  • Make filling:
  • Cut peaches into thin wedges and toss with 1 tablespoon sugar. Let stand until sugar is dissolved, about 5 minutes.
  • Meanwhile, beat cream with bourbon and remaining tablespoon sugar using cleaned beaters until it just holds stiff peaks.
  • Assemble éclairs:
  • Halve éclairs horizontally. Put bottom halves of éclairs on plates and top with whipped cream and peaches, then cover with top halves of éclairs. Drizzle plates with caramel sauce.

4 tablespoons water
1/2 cup heavy cream
3 tablespoons Irish whisky (see note)

Steps:

  • Swirl sugar and water together in a heavy saucepan until the sugar dissolves. Place over medium-high heat and cook, stirring occasionally, until the mixture turns a uniform honey-brown color. Remove from heat.
  • Pour a tablespoon or two of the cream into the caramel, standing back from the pan, because the mixture may spatter. Stir to blend in the cream, then add the remaining cream, stirring until completely mixed.
  • Stir in the whisky, transfer the mixture to a jar or other container and refrigerate until ready to use. The sauce may be warmed before using but it will not be as thick as if it is chilled. Serve over ice cream, crepes, cake or puddings.

CREAM PUFFS:
3/4 c water
1/3 c butter
2 tsp sugar
1/8 tsp salt
3/4 c all purpose flour
3 large eggs
1/2 c pecans

Steps:

  • 1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper; set aside. In a medium saucepan combine water, butter, sugar, and salt. Bring to boiling over medium hear. Add flour all at once, stirring vigorously with a wooden spoon. Cook and stir until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat, cool for 10 minutes. Add eggs one at a time, blending well with wooden spoon after each egg. Drop 8 heaping Tbs. of dough 2" apart. Bake for 30 to 35 minutes until golden and firm. Transfer cream puffs to a wire rack and cool. Using a serrated knife, cut each cream puff in half horizontally; remove soft dough from inside. Fill cream puffs with Pumpkin Mousse. Replace tops. Spoon some of the warm Maple-Caramel sauce onto dessert plates; sprinkle with pecans. Place a cream puff on each plate, drizzle each with remaining sauce and sprinkle with remaining pecans.
  • 2. Pumpkin Mousse: In a chilled large mixing bowl beat 1 cup whipping cream, 3 Tbs. sugar, and 1 tsp. pumpkin pie spice with the chilled beaters of electric mixer, on medium speed until soft peaks form. Fold in 1 cup canned pumpkin. Cover and chill for up to 4 hours.
  • 3. Maple-Caramel Sauce: In a small heavy saucepan stir together 1/2 cup packed brown sugar and 1 Tbs. cornstarch. Stir in 1/3 cup half & half or light cream, 1/4 cup water, 2 Tbs. pure maple syrup, and 1 Tbs. butter. cook and stir over medium heat until slightly thickened and bubbly (mixture may appear curdled before it bubbles.) Cook and stir for 2 minutes more. Remove from hear, stir in 1/3 tsp. vanilla. Serve warm.
