From the 2009 August Edition. Caramel? Brownies? Nuf said! To make caramel bits -- quarter 12 caramels -- I spray my knife with cooking spray first! Use the espresso powder depending on how much you want these to have a coffee flavor! Cook time is time they are in the oven -- not the time you are required to attend to them! :)

4 (1 ounce) unsweetened chocolate squares
3/4 cup butter
1 1/2 cups granulated sugar
1/2 cup firmly packed brown sugar
3 large eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup miniature marshmallow
1/2 cup caramel, bits
1 1/2 teaspoons instant espresso powder, to
1 tablespoon instant espresso powder

Steps:

  • Preheat oven to 350°. Line bottom and sides of an 8-inch pan with aluminum foil, allowing 2 to 3 inches to extend over sides; lightly grease foil.
  • Microwave chocolate squares and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals.
  • Whisk in granulated and brown sugars.
  • Add eggs, 1 at a time, whisking just until blended after each addition.
  • Whisk in flour, vanilla, and salt.
  • Stir miniature marshmallows, caramel bits, and instant espresso into batter.
  • Pour mixture into prepared pan.
  • Bake for about 45 minutes or until a wooden pick inserted in center comes out with a few moist crumbs.
  • Cool completely on a wire rack. Lift brownies from pan, using foil sides as handles. Gently remove foil, and cut brownies into 16 squares.

3/4 cup baking cocoa
1 cup canola oil
4 large eggs, room temperature
1/4 cup 2% milk
1-1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 cup semisweet chocolate chips
1 cup chopped walnuts, divided
1 package (14 ounces) caramels
1 can (14 ounces) sweetened condensed milk

Steps:

  • In a large bowl, beat the sugar, cocoa, oil, eggs and milk. Combine the flour, salt and baking powder; gradually add to egg mixture until well blended. Fold in chocolate chips and 1/2 cup walnuts. , Spoon two-thirds of the batter into a greased 13x9-in. baking pan. Bake at 350° for 12 minutes., Meanwhile, in a large saucepan, heat the caramels and condensed milk over low heat until caramels are melted. Pour over baked brownie layer. Sprinkle with remaining walnuts., Drop remaining batter by teaspoonfuls over caramel layer; carefully swirl brownie batter with a knife. , Bake for 35-40 minutes or until a toothpick inserted in center comes out with moist crumbs (do not overbake). Cool on a wire rack.

1 cup semi-sweet chocolate chips
1/2 cup butter, softened
4 -5 teaspoons instant coffee granules
2 tablespoons water
1 cup granulated sugar
3 eggs, beaten
1 teaspoon vanilla
1 1/3 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup butterscotch chips
1 1/2 cups icing sugar
1/3 cup butter
1 teaspoon vanilla
5 teaspoons light cream
1/4 cup butterscotch chips
1/4 cup icing sugar
1 tablespoon light cream

Steps:

  • Preheat oven to 350F and grease a 9x9 square pan.
  • In a medium (microwave safe) bowl combine semi-sweet chips, butter, instant coffee and water. Micro. on Med-Hi until chips just begint o melt. Stir until smooth, then stir in sugar and let cool.
  • Once cooled, stir in eggs and vanilla. In a small bowl mix together flour, baking powder and salt; stir into chocolate mixture. Stir in butterscotch chips. Pour into pan and bake 25-30 min's. When cool, top with icing and drizzle.
  • Icing: Sift icing sugar into a small bowl then blend in butter and vanilla. Add cream and stir until soft.
  • Drizzle: Melt butterscotch chips in microwave on Med. until soft; stir till smooth. Mix in icing sugar and cream. Spoon into a sandwich baggy and push drizzle into corner. Snip a small piece of corner and squeeze over icing.

1 box (18.4 oz) Betty Crocker™ Delights Salted Caramel Brownie Mix
Water, oil and egg called for on brownie box
1 tablespoon instant espresso powder
1/2 cup semisweet chocolate chunks
1 1/2 cups Cool Whip frozen whipped topping, thawed
Unsweetened cocoa powder, if desired

Steps:

  • Heat oven to 350°F. Place foil baking cup in each of 12 regular-size muffin cups; spray bottoms with cooking spray.
  • Make brownie batter as directed on box; stir in espresso powder and chocolate chunks until mixed well. Fill each muffin cup with about 2 heaping tablespoons batter.
